Among those who took advantage of the three-year pricefor $27 (a saving of $9) were Mr. and Mrs. Marshall HUgers of 909 Melrose court, McHenry. Mrs. Hilgers recalled that her picture appeared in the Plaindealer a few months ago when she won (1,000 in a super market promotion. The typically commercial hogs of the 1970's produce a fourth more lean pork per pound of feed than those raised in the 1950's. The average market weight of a hog today is only 240 pounds as compared with earlier hogs weighing about three times as m\ich. A lean hog produces lean pork. There are only about 70 calories per ounce in cooked lean pork -- a figure low enough to be considered a good diet food by Weight Watchers International.Pork is a good source of B vitamins, especially Vitamin B1 (thia­ min). Pork has about three times more thiamin than any other food. Pork also contains iron, riboflavin, niacin, phos­ phorus, and magnesium. It is a good source of complete protein and, with less fat, it is 96 to 98 percent digestible. This year, pork will be a good buy. But, don't forget, there is more to the hog than just those expensive thick-cut pork chops. Pork can be processed and prepared in a variety of ways. Fresh pork can be cut into not only chops, but steaks, roasts, and ribs. Pork can be cured and smoked into hams, shoulders, sausages, and bacon. Many luncheon meats and canned meats , are processed from pork. Fresh pork roasts should be prepared in a moderate oven (about 325°F.) until the internal temperature of the roast reaches 170°F. Always place the roast with the fat side up. Do not baste. Chops may be broiled on a rack about 2 to 5 inches from the heat. Broil for about 10 to 12 minutes per side. Partially cooked cured hams should be baked in a moderate oven un­ til the internal temperature of the meat reaches 160°F. Fully-cooked cured hams may be heated at the same temperature, but need only reach an internal temperature of 140°F. Pork also can be prepared successfully in microwave ovens. Most cuts require a medium to high temperature setting. Cover roasts and hams with waxed paper to prevent drying and spattering. After removing from the oven, the roast should sit for ten minutes in a "tent" of alu­ minum foil. The shiny side of the foil should be toward the meat. This allows the internal temperature to become more even, throughout the roast before serving. Pork and pork products should be stored in the refrig­ erator or the freezer. Fresh pork should be stored in your refrigerator's meat keeper for only two days before cooking. It also can be frozen at 0°F. ^•EDUCATIONAL) for up to six months. Ground pork can be frozen for a maxi­ mum of three months. Smoked pork can be kept frozen for up to two months. Be sure to wrap and seal the meat tightly in moisture-proof material. Defrost pork in the refrigera­ tor or during cooking. So, if you're watching your weight, include some of today's lean pork on your menu. It's nutritious, good-' tasting, and adds variety to any meal.
