Religious Publishers' Workshop Set May 10 . The McHenry County Board of Catholic Education will sponsor a religious publishers' workshop Wednesday, May 10, at SS. Peter & Paul school, 416 North First street, Cary. The workshop, which is in­ tended primarily for parochial and CCD religion teachers, will be presented in two separate and independent sessions from 3:30 to 5 p.m. and 7:30 to 9 p.m., respectively. Each session will consist of two interest groups (grades 1 to 4 and grades 5 to 8). Mrs. Mary Marsh, religious education coordinator for St. Patrick's parish, McHenry, and a consultant from Chicago will lead the sessions. The main thrust of the workshop is not so much to acquaint new teachers with the materials, as to assist ex­ perienced religious educators to more effectively use the current, up-dated texts and teachers' manuals. The input will include such valuable information as how to use home lesson plans, adult education, and family learning packets Both of the above sessions will include a question and answer series, and a complete display of slides, filmstrips, and sacramental preparation kits, and other materials. This is the correct name in accordance with the Uniform Retail Meat Identity Standards. It al­ so may be properly re­ ferred to as BEEF LOIN STRIP STEAK. Where does it come from? How is it identified? The top loin steak comes from the wholesale (pri­ mal) cut of beef called the loin, specifically from the short loin section (the area closest to the rib). The steak is identified by the one major muscle it contains, referred to as the loin eye muscle, and a thin outside layer of fat. This muscle is the larger of the two muscles in a Porterhouse steak. How is it prepared? By broiling indoors or on an outdoor grill. Steaks cut 1 inch thick should be placed 2 to 3 inches from heat; steaks cut 2 inches thick, 3 to 5 in­ ches from heat. Broil at moderate temperature. Beef Tip Roast On Rotisserie Assures Memorable Cookout A beef tip roast is an excel­ lent choice for rotisserie roast­ ing. It's easy to balance this compact cut on the rod so that it turns evenly and steadily. Since this roast is lean, bone­ less and practically waste- free, it provides more flavor- packed slices of meat per pound than most cuts. Brushing it with barbecue sauce, as in this recipe, supplies a popular supplementary flavor, says Reba Staggs, National Live Stock and Meat Board home economist. Barbecued Tip Roast 4 to 6 pound beef tip roast, tied Barbecue Sauce Insert rotisserie rod length­ wise through center of roast. Balance roast and tighten spit forks to fasten meat securely so that it turns only with the rod. Insert roast meat ther­ mometer at a slight angle, so the tip is in the center of the roast but not resting in fat or on rotisserie rod. Place on ro­ tisserie and roast at moderate temperature until meat ther mometer registers 130°F. Con tinue roasting, brushing fre­ quently with barbecue sauce to desired degree of doneness - 140°F. to 160°F. When thermometer registers about 5°F. below desired doneness, remove meat from rotisserie and allow to stand 10 to 15 minutes before carving into thin slices.
