4 Three Vegetables For A Trio Of Breads Muffins for breakfast, pip­ ing hot, fragrant with the aroma of--lemonade? Yes indeed. Carrots are in­ side, too. Frozen lemonade, teamed with frozen carrots, pack these tasty muffins with vitamins (C and A). This unique flavor combination is perfectly at home with traditional breafkast fare as well as brunch and lunch casseroles. Frozen non-dairy coffee creamer is a bonus ingredient which makes these muffins free of animal fat. Best of all, the hot muffins are so easy to lift right out of the pan. (Use a fork to avoid burning fingers.) Pea Pickin' Bread is a quick bread using the last cup of frozen peas in the bag. Serve it hot for dinner. It goes well with plain cooking or with Italian style seasoning. Toast the sliced loaf for lunch and serve with slices of cheese or a rarebit sauce. It is especially good with tomato soup. A rich butterscotch glaze crowns pecan-topped Squash Swirls. The frozen cooked squash makes a rich dough. Dedicated bakers find this dough "well behaved" and easy to work. Dedicated eaters will find Squash Swirls very easy to eat. Make up the dough 6 to 36 hours ahead. Refrigerate until time to make the rolls. GLAZED CARROT MUFFINS 1 IV* '/* IVi v« Vl 2 1 V4 cup frozen sliced or baby carrots cups flour cup sugar teaspoons baking powder teaspoon salt teaspoon baking soda eggs (6-ounce) can frozen lemonade concentrate, thawed cup frozen non - dairy creamcr, thawed cup salad oil tablespoon butter or margarine Cook carrots as directed on package. Chop or grate coarsely. In mixing bowl, combine flour, sugar, baking powder, salt and soda. In separate bowl, mix eggs with only '/i cup lemonade concentrate, non-dairy cream­ er, and salad oil and carrots. Add all at once to dry ingredi­ ents, stirring just until moist­ ened. Fill greased muffin pans about three-fourths full. Bake at 400°F. for about 25 minutes, until browned on edges. Com­ bine remaining lemonade con­ centrate with I tablespoon melted butter and brush onto tops of hot, baked muffins. Serve at once.
