Try rice with this medley of vegetables for a delicious one-dish meal: GLAZED CHICKEN AND VEGETABLES WITH RICE 2-1/2 to 3 pounds choice chicken pieces Salt and pepper 2 tablespoons butter or margarine 1 large onion, cut in 8 wedges 2 ribs of celery, cut in 1-inch pieces 3 carrots, cut in 2-inch pieces 1/2 large green pepper, cut in 1-inch squares 1 can (14-1/2 to 16 ounces) tomatoes (about 2 cups) 1 clove garlic, crushed 1/2 teaspoon thyme 2 teaspoons salt Dash of cayenne pepper * ,1 bay leaf 1-1/2 tablespoons cornstarch 3 cups hot cooked rice Season chicken with salt and pepper. Brown on all sides with butter. Add onion, celery, carrots, green pepper, tomatoes and seasonings. Bring to a boil, cover, and simmer for 30 to 40 minutes or until chicken is tender. Blend a little water into the cornstarch. Stir into chicken-vegetable mixture. Cook about 2 minutes longer. Remove bay leaf. Serve over beds of fluffy rice. Makes H servings. Note: If>dish is to be held an hour or longer before serv­ ing, turn chicken mixture and rice into separate containers. Cover and place in a 140° to 160° oven for 1 to 3 hour*. Or prepare and refrigerate until ready to serve. Reheat.
