Domestic bleu and Danish bleu are both Roquefort type cheeses and can be substituted in recipes calling for Roquefort, but the flavor will vary with the cheese that is selected. A good quality Ro quefort or bleu has quite enough flavor on its own without the addition of seasonings or bottled sauces. Cream Dressing V« pound Roquefort cheese '/» cup mayonnaise and Vi cup commercial sour cream V* cup chopped parsley. Cream Roquefort cheese, add mayonnaise and sour cream and add a speck of salt if you wish. Mix together well and serve over wedges of lettuce sprinkled with chopped parsley. Vinegar Dressing cup salad oil V« cup white wine vinegar V4 pound Roquefort cheese A bit of lemon juice Maybe a dash of salt V* cup chopped parsley Mix oil and vinegar. Add Roquefort cheese that has been crumbled well and blend thoroughly. Add the lemon juice and salt to taste. This too is good served over lettuce wedges and chopped parsley on top. SSSftST' When Pi Alpha, a chapter of Beta Sigma Phi sorority, met in the home of Pam Doherty, McHenry, plans were completed for the tag day to be held in McHenry Saturday, March 10, from 10 a.m. to 2:30 p.m. The proceeds of this venture will be donated to the National A.L.S. Foundation, Inc. to help in their research of Amyotrophic Lateral Sclerosis. This is a progressive neuromuscular disease characterized by a deneration of motor cells in the spinal cord and brain, and, to date, there is no known cure. A.L.S. is frequently called Lou Gehrig's disease. The National A.L.S. Foundation, Inc., was officially launched as a not-for-profit voluntary health organization in July 1971. Beta Sigma Phi, of which the local sorority, Pi Alpha, is a chapter, is a social, cultural and service organization with over 20,000 chapters throughout the free world, and is dedicated to life, learning and friendship.
