Kale prefers cool weather; it will withstand light frosts and recover to regrow vigor­ ously. Two crops are usually planted; one in very early spring and another in late summer for fall harvest. In northern areas spring seeded kale will grow and produce through late fall. Kale grows so rapidly from seeds that few gardeners bother to start it early in­ doors. Some gardeners start seeds of kale and other cab­ bage family members early out of doors with the aid of minature greenhouses. These are made by cutting the bot­ toms out of half-gallon or 1-gallon plastic bottles, preferably translucent. Clumps of seedlings grown under these shelters can be separated and transplanted after frost danger is past. For delicate flavor and ten derness, harvest only the young leaves of kale. Strip out the center ribs. Flavor is improved by cold weather. Prepare by simmering to taste. You can add butter or pork to heighten the flavor.
