The second session will be Thursday, July 31,' from 10 a.m. to noon; the third and final one of the series will be Thursday, Aug. 7, from 10 a.m. to noon. ^ All sessions meet in the Council chambers at the McHenry City Hall. Tips On Preserving Since canning and freezing of home grown fruit and vegetables has economic as well as ( palate pleasing importance, perhaps even more this year than in the past, the McHenry County Department 6f Health ex pects more people will be taking up this activity this summer. Because improperly home canned food can cause illnesses ranging from mild to severe and death, the department wants to remind of some important points to remember before beginning. Use only lids, seals and jars manufactured specifically for home canning and checks all of the jars and containers for cracks and faults. Do not reuse lids or seals. Everything used in the process - jars, pots pans, spoons, dippers, strainers, funnels, etc., should be ihoroughly washed and rinsed in hot water - 'preferably scalded with v boiling water - after washing and before being used. Be sure that children assisting in the process are cautioned about being careful with the boiling water so they do not t scald themselves or others in the area. •When preparing food for canning or freezing, .be sure to thoroughly wash raw fruits and vegetables and then process them according to the instructions. For those who do not have canning or freezing instructions, they / can be obtained from the University of Illinois Ex tension Service Office in Woodstock. After having properly \ processed the food into jars, freezer containers or dried food bags, be sure to put it into the correct storage temperature right away. Food for the freezer should be frozen immediately, not waiting until after it cools to • room temperature. Sealed jars can be stored while still warm, but should have more "breathing room" until completely cooled and then stacked close together for long term storage. Again, remind children helping that the jars will be hot and they will have lo use gloves or hot pads in han dling ihem after being removed from the processor. Final storage or canned goods should be in a cool dry place away from heat sources like hot water pipes or sunlight and away from moisture that could rust the lids.
