Most fruit and vegetables can be canned with either the hot pack or raw pack method. However, there are excep tions. According to North Carolina Agricultural Extension Foods and Nutrition Specialist Dr. Nadine Tope, apples, tomato juice, beets and greens should be canned with a hot pack only. When the hot pack method is used, the fruit or vegetable is heated before it is put into the jar. Most home canning authorities prefer this method. Cold or raw pack just means putting the raw fruit or vegeta ble into a jar, putting the lid on properly and then processing in either a water bath or pressure canner. The raw food is cooked and pro cessed at the same time. *--- According to Dr. Tope, the raw pack method , will have longer processing times than the hot pack method, but when done properly, either method should give good re sults. - Create Nuclear Safety Department In Illinois agenci \ "The Nuclea Second Choice "You're my second choice," one voter said to the weary campaigner.
