By Mary Richards Each year, as the holidays approach, the Illinois Department of Public Health receives requests for the proper way to prepare turkey and dressing. Turkeys, as well as other poultry and red meat animals, frequently harbor disease-causing bacteria in their intestinal tracts. These germs pften may ac cidentally contaminate the meat during slaughter and processing. If these bacteria are allowed to multiply during preparation and cooking, they can cause illness. So, for those who missed them last year, • or have forgotten, here are some suggestions from the state health department for preparing the turkey: First...don't try to thaw a frozen 20-pound bird the same way as a three-pound chicken. Complete thawing may take several days. Thaw the turkey in the refrigerator or in a place where the surface tem perature of the bird will remain below 45 degrees Fahrenheit or seven degrees Centrigrade. Be sure the cavity is completely thawed; otherwise, sufficient heat to kill germs may never penetrate to the center of the bird. Second, when you are cooking a turkey, the thickest part of the meat or dressing should reach 165 degrees Fahrenheit to assure that all harmful bacteria have been destroyed. To make sure the proper temperature is reached, insert a metal-stemmed meat thermometer into the thickest part on the inside of the thigh, breast or stuffing. And finally, after the meal, do not leave the turkey in an unheated oven or on a kitchen counter. Put lef tovers in the refrigerator at once. A simple safety rule is to keep food either hot or cold, or-don't keep it. If these suggestions are followed Thanksgiving guests' only discomfort will be from eating too much - good-and safe-cooking. CONSERVATION MEETING The regular meetings of the board of trustees of the McHenry County Con servation district take place on the first and third Thursday of each month beginning at 7 p.m. in the district office at 6512 Harts road, Ringwood. The next meeting is Dec. 4. Missing Let As soon as his meal was served, the lone diner called the waiter: "Why is this chicken missing a leg," was the query. "I guess it was in a fight," was the lame excuse. "Well then, bring me the winner," the gentleman demanded.
