Start by digging canning equipment out of storage now. Check over lids of messy cooker and bottler for rust spots. If any are found, use steel wool, then clean rust spots, wash and dry- Check any exhaust openings or other crannies for dried food particals. If they are found, clean well with soap, water and a small brush. Look over the rubber very careflly to see that there are no cracks. Dried and cracked reels shoud be replaced. Next check the pressure cooker to find out if the gauge is registering the correct amount of pressure. Te extension office has a maximum thermometer with directions that can be purchased. Using the pressure cooker without checking it once every year could cause an accident. Be sure to find and read over directions on how to use the pressure cooker. Each brand and models within brands have different and specific directions for use. When buying pressure cookers at a garage sale beware that the bargain may not be a bargain, especially if it's an off i>rand or older model or does not have directions with it. After checking the basic equipment, line up the other items needed; jars, lids, rings, and basin to sterilize these pieces in. Be sure to have uniodized salt and fresh spices. One will also need reliable recipes. Know how to tell when fruits and vegetables are at correct maturity to be picked. That is the time one must be ready to go.
