Mullen Baby Baptized Send ABC's With The Children In St. Patrick's Church Sean Edward Mullen received the Holy Sacrament of Baptism Sunday, Nov. 8, during an afternoon ceremony celebrated by the Reverend Edmund P. Petit, at St. Patrick's Catholic church, McHenry. The five-week-old infant wore his father's white Christening suit and shoes, and a Christening hat which had been worn by his God­ father and uncle, David L. Smith, Jr. A cousin, Marie Elaina Mullen, was the sponsoring Godmother. McHenry American Legion Auxiliary In December, 1937, the lerican Legion Auxiliary, department of Illinois, 'opened a small non-profit shop in the Chicago's Loop area, known as Veterans' Craft Exchange. The pur­ pose of the exchange was to assist disabled veterans to dispose of handicraft made by themselves or their its. This event is held at the club in Alden, located one-quarter-mile north of Route 173 on Alden road. ABC Cookies are so named because they're ABC-easy to mix and provide lots of vitamins. These nutritious oatmeal cookies, laced with carrots. . .and love, are' the gbod- for-you kind of snacks that parents are looking for. There is vitamin A in the shredded carrots. And then are B-vitamins in the quick or old fashioned oats. By the way, whole grain oats also contain vitamin E, nine minerals and are a good source of fiber in the diet. ABC Cookies Heat oven to 350°F. Grease cookie sheet. In small bowl, combine flour, cinnamon, baking powder and salt. In large bowl, beat together butter and sugar until light and fluffy. Blend in egg and vanilla. Add dry ingredients; mix well. Stir in oats, carrot and nuts. Drop by rounded tahlespoonfuls onto prepared cookie sheet. Bake for 15 to 17 minutes; cool. Store in loosely covered container. Makes about 5 dozen cookies. "What's Green, Bed, Orange and Nutritlettsf" I - guess I love Chinese cooking so much because, of all the ethnic foods, their vegetables are ' not over­ cooked. I think the sign of a really great cook is one who can make vegetables look so absolutely georgeous that you want to dig in and eat them. Part of this trick is in the cooking of the vegetable. Green vegetables get their beautiful color due to chlorophyll, a -very tem­ peramental coloring agent which dislikes heat and will absolutely not tolerate adds. Acid turns green vegetables to a bronze color, which is why marinated green vegetables sometimes have that funny color. For the best results in cooking green vegetables, use small amounts of boiling water, not more than one- half inch at the bottom of the pan. Cook uncovered for the first three minutes to allow the volatile acids formed when the cells soften to escape in the steam. Then, cover and cook to a tender, crisp state and do not overcook. Remove the vegetables from the heat when they are slightly un­ derdone; they will finish cooking while you are waiting to serve them. Red is another changeable color in foods. Red foods take on different hues ac­ cording to the acid or base reaction of the cooking medium. For instance, red cabbage cooked in alkaline- reacting milk will have a slightly blue cast, while that covered with an acid sauce will be a bright, clear color- which is one of the reasons your mother probably makes a little vinegar sauce for red cabbage. Usually a food that has a nice red color is more appetizing than the blue ones. Reach for an acid such as vinegar or lemon juice if your red vegetables look' blue. Red cabbage cooked with a tart apple adds a new taste and enough add to keep the color of the "abbage bright. Orange is the model vegetable color because it is the most stable of all the vegetable colors. It does not change with heat, adds, or bases and stays bright even when the vegetable is withered. It does not dissolve in the cooking water, which makes carrots highly nutritious since the vitamin A is not lost in the cooking water. But, the vitamin A is dissolved in fat, so it is more nutritious for you to cook carrots in water than to fry them in a lot of fat. Long, long ova-cooking may dull the bright ap­ pearance of orange vegetables, but usually this is due to the change in the PAGE 3 - PLAINDEALER Sugars rather than in the color. Another factor even more important than the ap­ pearance of our vegetables is the nutrient content, which is one of the reasons we include them in our daily meals. To preserve the nutrients in vegetables, wash thoroughly but quickly, trim sparingly, use small amounts of water and cook as quickly as possible. Vegetables can be prepared in a variety of ways such as broiled, baked, boiled, panned, fried, steamed, or pressure cooked. You can add sparkle to your vegetables by putting dried herbs in them-dill, a little oregano, a little thyme, and sometimes rosemary. I have also discovered that basil with spinach is really good. Squashes are mar­ velous with an orange glaze on them. And if you a reared of tomatoes, how anout broiling them with a little thyme and oregano, or a little garlic powder. Potatoes, which can be prepared in so many dif­ ferent ways, are still best for you when baked. Vegetables should be an important part of our meals.
