FEBRUARY It. 1162 Working With Basics The City of McHenry Department of Paries and Recreation will be offering a cooking class called "Working With Basics". It is a three-week proficiency course in basics of cooking and improvisations. Sandy Young will cover the preparation of crepes, souffles and quiches with at least two variations of each entree. Within the crepe dynasty such variations as chicken and mushrooms in buckwheat crepes will be made. The souffle class will present a non-collapsible souffle then expanded to include a cheese variety.™ Baked in an openfaced pastry shell, the quiche is really just a custard in fancy dress which will also be prepared. Working With Basics will be held at Parkland Junior high school starting Monday, April 19, from 7 to 9:30 p.m. Register now and master these three basic dishes for economical, easy, and elegant dishes to add to recipe selection. Chinese Cooking I The City of McHenry Department of Parks and Recreation is still taking Historical Society registrations for their Chinese Cooking Class for Beginners. Sandy Young will teach this popular course for the third time this winter. The most important elements of this course are learning the use of the wok and a facinating array of Chinese ingredients. Enjoy each week a feast of dishes using some of the basic Chinese cooking techniques. This Chinese Cooking class will be Mondays beginning Feb. 15, running for four weeks. It will be held at Parkland Junior high school from 7 to 9:30 p.m. •J • Bread Baking For Beginners Department of Parks and Recreation is taking registrations for the Bread Baking Class for Beginners. This class gives a lesson in baking including all the tricks and techniques of working with yeast dough mixing, kneading, and baking. In this class one will also learn to bake some ethnic Easter breads. It will be held at Parkland Junior high school from 7 to 10 p.m. starting Monday, March 15. Join Sandy Young and learn how to make those yeasty aromas and sweet tastes of yester year. For further information call as above. Antiques Course To Be Offered In County The board of directors of the McHenry County Historical society has ap­ proved dates for the adult- education antiques course to be conducted by Leo and Constance Parenti during March and April: Registration will be Feb. 15 through March 1. Course sessions, are Mondays only, 8 to 10 p.m., March 1,8,15,22 and 29, and April 5, 12, and 19. They will be held at the McHenry County Historical society museum, corner of Main and Washington streets, in Union, phone 923- 2267. The series of eight lec­ tures-participation sessions is part of a new endeavor by the Historical society to extend the usefulness of its museum to residents of the area, according to Nancy Fike of McHenry, museum Curator. Courses on ad­ ditional subjects besides antiques are currently being considered by the board. Ms. Fike, emphasizing the worth of the course for learning and enjoyment, recalled the extensive background of the Parenti teaching team: "The Parentis have been Folk Singer In Series At Coffeehouse McHenry County college continues its coffeehouse series with the Thursday, Feb. 18, performance by folk singer Linda Black. Here are a few safe driving practices to help you offset the dangers of winter driving: 1--Reduce your speed according to conditions. There is no such thing as a "completely safe" driving speed on snow or ice. Every city block and mile of high­ way may be different, depending on sun or shade and the surface of the road. 2--Use snow tires and-or chains on your rear wheels. Snow treads greatly improve general traction, including starting and stopping. Tire chains provide further ef­ fectiveness when ice and snow cover the road. Many hardware stores sell por­ table chains to use in an emergency. Neither snow tires nor chains, however, will allow you to drive on slick roadways at normal speeds. 3--Keep your windows clear. Don't start driving until the windshield is defrosted and clean. Remove snow and ice from your vehicle, even if you aren't going very far. 4--Get the feel of the road. Start very slowly and test your brakes to determine how much traction you can expect from your tires. Slow down before arriving at an intersection, a turn or a stop.
