Thanksgiving Is Still A Favorite DlRTHS PAGE 3 - PLAINDEALER - FRIDAY, NOVEMBER 19,1982 Calling Colleen People concerned by a breakdown of tradition in a mobile American society can take consolation this Thanksgiving. Various social barometers reveal that the nostalgic "over the river and through the woods" image of this holiday remains intact. According to industry figures, approximately 40 million Thanksgiving greeting cards are expected to be exchanged this year between family and friends. Sales of Thanksgiving cards have increased 13 percent annually for the last five years, making it the seventh largest card-sending holiday, just behind graduation. Mobility is an important factor for the increased card sales. Thanksgiving is one of the favorite, ail-American holidays that has warm associations of a hearty meal and the companionship of loved ones. If people can't be with others because of distance, a greeting card with a personal message can at least bring them closer in thought. Receiving a card reminds someone that even though it may not be possible to be together for this special occasion, they're still remembered. More and more people are becoming aware that Thanksgiving cards are available.. Interesting geographical dif ferences exist in card sales. Significantly more cards are bought in the northern areas of the country than in the southern regions, such as Florida, Georgia, Louisiana and Texas. One reason for this difference may be because Northerners are more tadition-oriented. They are also more likely to send cards to family Timely Quiz On Cooking Turkey Although turkey is now available and served all year 'round, the bird is particularly popular at this time of year when everyone does so much en tertaining. • Here is a timely quiz on cooking turkey which is apt to provide a few surprises. Taking this true-false quiz may help assure that the next turkey is done "just right" Answers are at the end of the feature. 1. Turkeys can be cooked breast down, as well as breast up. 2. Doneness tem perature is the same for breast, thigh and dressing. 3. Turkeys can be roasted in either a deep or shallow pan. 4. A big bird requires more cooking time than a small bird in direct proportion to weight. 5. A room- temperature bird (65 to 70 degrees) cooks faster than a refrigerated (40 degree) one. (It is not recommended that bird be allowed to rise to room temperature). 6. The most popular and generally accepted temperature for cooking turkeys is 325 degrees. 7. A 25 degree variation in oven temperature can cause up to a 20 percent variation in cooking time., 8. An oven film covering permits faster cooking than a foil tent. 9. A cooking-time chart is all one needs to turn out a perfectly- done bird every time This quiz was prepared by home economists as a means of clearing up some common miscon ceptions about cooking turkey. and friends who may have moved away for career opportunities or a more favorable climate. A large percentage of cards are exchanged between families instead of between individuals, and sentiment still rank? high during Thanksgiving. Verses on greeting cards contain such thoughts as "missing you", "thinking of you" and "wish we could be together". Sentiments stress blessings, memories, gratitude and good wishes for the season and year. Religious cards, with cute or lightly humorous verse or art, are also popular cards to share with loved ones.
