Rice Stuffing Creates Change From Common Fare For Turkey Add an extra festive note to the holiday table this year with an elegant stuffing of rice and pecans for the roast turkey. Versatile rice is deceptively economical, about four cents for a one-half cup saving, and lends itself to a variety of holiday menus. It's equally delicious as a stuffing for poultry, game, or as an ac­ companiment for other meat dishes. The United States is known throughout the world for producing clean, uniform, high-quality rice. Various forms are available depen­ ding upon the degree of milling or extent of processing involved. Regular-milled white rice has had the hull and bran removed, and is cleaned and graded, ready to be cooked. Parboiled rice is steam-pressure processed before milling. This aids in .the retention of vitamins and minerals. After cooking, the grains will be fluffy, separate and plump. Pre-cooked rice has been milled, cooked, and dehydrated. It requires a minimum of preparation time since it needs merely to have the moisture restored to it. Nutty-flavored brown rice is the whole unpolished grain with only the outer hull and a small amount of the bran removed. Most all packages of rice give cooking directions and one can use a favorite form of rice for mating stuffings for poultry, game or meats. Remember, cooked rice keeps a few days in the refrigerator. PECAN RICE STUFFING Vz cup butter or margarine 1 civ chopped onions 1 cup chopped celery Vt cup snipped parsley 8 cups cooked white or brown rice (cooked in turkey or chicken broth) 1 cup chopped pecans 2 tsp. ground thyme l-1* tsp. salt 1 tsp. ground or rubbed sage V4 tsp. ground blade pepper Vfc tsp. ground cloves Ms tsp. ground nutmeg Melt butter in a large pan. Add onions, celery, and parsley, Cook over low heat until tender, stirring con­ stantly. Add cooked rice, anH seasonings. Toss together lightly. Makes enough stuffing for a 12 to IS pound turkey. Note: Stuffing may be cooked separately in a covered hairing dish at 325 degrees for 30 to 40 minutes. Defenders Sponsor Discussion On Nutritional Food Recipes The McHenry County Defenders, a local environmental organization, is sponsoring a progam which will feature ways to alta ones shopping, cooking and eating habits to avoid the rich foods that usually accompany Christmas and New Years. This event, to be held Dec. 2, at 10 a.m. in the Crystal Lake Ambutal (4900 S. Rt. 31), will feature Pat DeAngelis, R.N. and nutritional therapist at the American In­ ternational Clinic in Zion, 111. She will discuss good food recipes for the holidays and the practicality of good nutrition. For the past six years, Mrs. DeAngelis has spoken regularly to PTA's and community groups about good nutrition and helped start the Crystal Lake School District No. 47 Nutra Lunch Program. Also, for three years she was a regular guest on a local radio station. With five children of her own, Mrs. DeAngelis understands childrens' eating habits and knows ways to encourage than to eat properly. She will also have copies of good food recipes for the audience to take home. The public is invited to attend. Babysitting will be provided for pre­ school children in the adjoining meeting room, beginning at 9:45 a.m. Tips On Buying Turkey If you choose carefully, your traditional holiday turkey can be more than a great feast. It also can be nutritious and a good buy, says the American Heart association. They further advise that turkey is an ideal food for most everyone, even those on low-calorie diets, because it's relatively low in cholesterol and fat. When a turkey is roasted, much of that fat drains off. The white meat is especially low in fat and calories. Frozen, plain turkey is usually the most economical and nutritious. In contrast, frozen, self-basting turkeys contain injections of a solution of broth and butter or cooking oil. The basting oil adds calories, and the broth is often high in salt (sodium chloride). Another drawback: the basting fluid makes the turkey weigh more and thus cost more. One must pay for the basting fluid at the same rate as the turkey meat. When buying a self-basting turkey, one should avoid the ones injected with oils containing saturated fats, such as those found in butter and palm and coconut oils. Eating saturated fats tends to raise the level of cholesterol in the blood. Choose self- basting turkeys that contain un­ saturated vegetable oils such as corn, cottonseed or safflower. Read the label. One will also want to read the label if purchasing a prestuffed turkey, to find out how much salt and other ingredients are in the stuffing. Never thaw a prestuffed turkey. Put it in the oven still frozen and cook as directed. It will take longer, but it's much safer. Bacteria love a warm, moist en­ vironment and will thrive in an un­ cooked, prestuffed turkey if it is thawed. With a plain turkey, fresh or frozen, what goes into the basting fluid and the stuffing can be controlled. One can baste the turkey in its own juices, and thus avoid unnecessary fat, cholesterol and salt. Turkey leftovers can be made into many delicious dishes, including turkey with water chestnuts. Of course, there's nothing better for lunch than a cold turkey sandwich. When considering cost per serving, taste, and the good nutrients friend turkey provides, it's easy to un­ derstand why so many people invite him to their holiday dinner every year. He should be considered as good eating year-round. Avoid ROdew Don't put wet clothes in the laundry has or hamper. Allow them to dry thorough­ ly first, to avoid any possi­ bility of mildew.
