SAFETY HINTS By Secretary of State Jim Edgar Motor vehicle ac cidents are the leading cause of death of children under 5. Ac cording to the National Safety Council, 720 children in this age group were killed last year and 29,000 were injured in auto ac cidents in the United States. Experts say that 80 percent of fatalities could be avoided by using effective child restraint systems. Fewer than 10 percent of U.S. children ride in them. Parents should consider this list of statements supporting the use of child restraints: 1) Children under 5, or weighing less than 40 pounds, should ride in a child restraint; 2) The safest place in the car for a child is in the back seat; 3) If no child restraint is available, children should use the car safety belt; 4) A child held in an adult's lap is not safe from injury. In many accidents the adult crushes the child when he or she is thrown forward on top of the youngster; 5) Children should not ride in the luggage compartment of a station wagon or hatchback; and 6) Hatchbacks always should be kept closed when children are riding in the back seat. Children this age are too young to protect themselves, so it is up to their parents to look out for their best interests. Unfortunately, many parents do not realize the risks of letting a child ride in a vehicle unrestrained or sitting on an adult's lap. Young children are one of our state's most important resources and deserve our protection. TbeDiffcresce What makes architects and engineers more visually creative than accountants or bankers? Two Texas A A M psychologists say the difference may be linked to physical characteristics in the brain. A husband and wife re search team discovered that sub jects who frequently reverse im ages in a drawing that appears to be two profiles or a vase, thought of themselves as more creative. A high number of reversals pre viously has indicated perceptual instability which, in turn, may be caused by a neurological mech anism. On Restoration Of Homes Tuesday, Nov. 30, at 8 p.m., the McHenry County Historical society will present a program on old home restoration at the Nippersink district library at 10308 Main street, Richmond. Included in the free one-hour program will be two short slide-tape p r e s e n t a t i o n s o n "Overall Planning for H i s t o r i c H o u s e R e s t o r a t i o n " a n d "Reading a Building". Immediately following, a question and answer session will be con ducted by John Zabor, an architect from the Richmond area who serves on the Historical society's Historic Sites committee. An increase in the number of applications to the society for the plaquing of 100-year-old sites and structures in M c H e n r y c o u n t y prompted this program, which the society hopes might provide some help to the increasing number of homeowners i n t e r e s t e d i n r e s t o r a t i o n . . W h a t should be stressed is that mistakes made in the attempt to save historic homes may be a v o i d e d t h r o u g h research, patience, and careful planning. NOVEMBER 28.1002 Leftover Turkey Turns Into Delectable Mexican Dish X Qirjhs \ With this recipe for Turkey Crepes Mole it's easy to turn leftover turkey into a tasty South-of-the-Border party treat. It's the little Mexican touches that make the difference. The ad dition of corn meal to the crepe batter gives authentic Mexican corn flavor to crepes. In fact, these light, delicious corn meal crepes are easier to make than corn tortillas! The filling is called mole (pronounced mo-lay) because it blends the traditional mole ingredients - chili peppers, cinnamon and chocolate their most common, convenient forms. TURKEY CREPES MOLE Crepes: 1 cup milk 2/3 cup all-purpose flour 2 eggs 1/3 cup enriched corn meal 1/8 tsp. salt Combine all ingredients; beat until smooth. For each crepe, pour about 2 tbl. batter into hot, lightly greased crepe pan or small skillet. Im mediately tilt pan to coat bottom evenly with thin layer of batter. Cook 45 seconds or until top looks dry; turn. Cook about 20 seconds. Stack crepes between sheets of wax paper. Filling: 2 cups chopped cooked turkey or chicken 2 tbl. vegetable oil 1 16-oz. can whole tomatoes drained 1 10-3/4 oz. can chicken »• broth, condensed 1/2 cup chopped onion 1 4-oz. can green chilies, drained 4 tsp. unsweetened cocoa 1/2 tsp. garlic salt 1/4 tsp. cinnamon dairy sour cream In large skillet, cook and stir turkey in oil until golden brown. In blender or food processor, combine remaining ingredients. Blend just until nearly smooth. Pour over turkey ; simmer 25 to 30 minutes, stirring occasionally. (Filling will be thin consistency at this point.) To assemble crepes: In baking dish, spoon 1A* cup filling down center of one crepe. Roll up ; place seam side down in ungreased 13x9-inch baking pan. Repeat with remaining crepes. Cover with aluminum foil; bake 20 to 25 minutes. Serve with sour cream. Makes 12 crepes. Note: Crepes and filling may be made one day in advance and stored in refrigerator. o Proceed as recipe directs, baking for 25 minutes or until heated through.
