If you're left with what appears to be acres of food, it's a good idea to plan menus that will enable you to avoid waste. This can be done by refrigerating the foods you will use first and freezing the balance. Cooked meats and meat dishes have a recommended refrigerator life of one to two days at 35 to 40 degrees F., but may be kept in the freezer at 0 degrees F. for up to two months. Chicken and turkey have a recom­ mended refrigerator by Mary Richards . A l t h o u g h d r u n k driving is a year-round problem, it becomes a serious problem during the Christmas holidays. Each year, the National Safety Council projects traffic fatalities that will occur during the h o l i d a y s , a n d , statistically, we know that the majority of these fatalities will be linked in some way with a driver who has had too much to drink. Alcohol is a drug that depresses your central nervous system and slows the -activity of your brain and spinal cord. Even if you've had only a few drinks, your reflexes are slowed down. Your body does not digest alcohol the way it does food. The alcohol you drink is absorbed directly from your stomach and intestines into your bloodstream. This absorption takes p l a c e r a p i d l y , especially if your stomach is empty. So, before you drive, give yourself time to burn up the alcohol in your bloodstream. How much alcohol does it take to make the average person drunk? That varies from person to person. Some people have a higher tolerance than others do, and even individual tolerance can vary depending on your physical condition and your emotional state. But, if you weigh 150 pounds and drink three martinis, or five ounces of hard liquor, in an hour, you would be considered legally drunk. If you drink this much and want to get the alcohol content of your blood back to a normal level, you should stop drinking for about three hours. Black coffee or cold showers will not help sober you up. Time is the only remedy. The old saying, "If you give a drunk a lot of black coffee, all you will have is a wide-awake drunk," is essentially true. The best advice for those who are drinking is simply, "Don't drive." But being realistic, we must recognize that many people are going to do both. If you know you are going to drink and then drive, eat before you start drinking. Having something in your stomach will help slowy down the rate of a sorption. You sfiofcrfd also space your dri Drink slowly to giv your body time to handle the alcohol. If you consume no more than a third of an ounce of alcohol each hour, you will probably stay sober, for the average, healthy liver will burn up alcohol at the rate of about one-third ounce an hour. Be sure you know what yoy are drinking. Don't accept a drink if you don't know what is in it. And, before you have your first drink, set yourself a limit on the number of drinks you will have, and stick to it! Finally, give your body a chance to "burn up" the alcohol you have consumed before you get behind the wheel. The Illinois Depart­ ment of Public Health urges you help avoid tragedies during the coming holiday season by staying sober if you are going to drive. Kretschmer has been elected president of the Northeastern Illinois Planning Commission (NIPC) by the board of commissioners. Kretschmer, a member of the DuPage County board, succeeds Edgar Vanneman Jr. as president. A commissioner since 1975, Mrs. Kret­ schmer had served as vice-president for planning and policy development. She was first elected to the DuPage ' /County board in 1974 and serves as chairman of the County Development committee and as a member of the DuPage County Forest Preserve district. Ms. Kretschmer has been appointed by Governor Thompson to the Illinois-Indiana Bi-State com­ mission, where she serves as co- chairman and was elected to the National Association of Regional Councils board of directors last May by local government elected officials from around the country. The association is a membership organization for councils of local government. Dean C. Cunat, McHenry County board member from McHenry, was named vice-president for Planning and Policy Development. The Northeastern Illinois Planning commission is the comprehensive planning agency for the six-county metropolitan area. In addition to planning, the agency provides technical and research assistance and reviews federal grant requests for local governments. In accepting the presidency. Ms. Kretschmer said, "The loss of federal funds (to the commission) has in­ creased our responsiveness to local governments." She looked forward to the opportunities and challenges presented by the return of federalism to the region.
