The Christian Brothers of California suggest treating your guests to cooling Strawberry Rost Daiquiris, along with golden Parmesan Muffins, a spirited souffle and a frosty wine sherbet for dessert. NAPA SHERBET STRAWBERRY ROSE DAIQUIRI 1 pint fresh strawberries, sliced 2 tablespoons frozen orange juice or limeade concentrate IV* cups The Christian Brothers Napa Rose 1 quart cracked ice 2 teaspoons sugar Combine all ingredients in blender and whir for a minute or until slushy. Makes five cups. WINE AND CHEESE SOUFFLE VJ cup butter '/S cup flour % cup milk 1 cup The Christian Brothers Chablis 1 cup grated Swiss cheese 2 teaspoons prepared Dfyon mustard % teaspoon garlic powder 3 eggs, separated V* teaspoon cream of tartar Melt butter in saucepan. Stir in flour. Add milk and ¥4 cup wine and cook, stir­ ring over medium-high heat until mixture comes to a boil and is thickened. Stir in cheese, mustard and garlic powder, stirring until melted. Remove Vi sauce {Wn cups) and save for later. In small mixing bowl, beat egg yolks until thick and light colored. Stir into cheese mixture, stirring vig­ orously. In clean bowl with, clean beaters, whip egg whites with cream of tartar until stiff but not dry. Fold in egg yolk mixture. Pour intoTive-cup souffle dish. Draw a circle in top, 1-inch deep. Bake at 350 degrees until puffy and lightly browned, about 40 minutes. Meanwhile stir V* cup re­ maining wine into reserved sauce and heat through. Serve souffk promptly when baked, with sauce over. Place in freezer until softly frozen. TUrn into mixer bowl. Beat vigorously just until frothy and berries are evenly blend­ ed. Freeze solid. Makes one quart. PARMESAN WINE MUFFINS -2 % V4 cup batter or margarine, melted Vt cup The ChrWM Brothers Chablis 1 egg V4 cup mfflk V* cup shredded 1 cheese Combine biscuit mix and oregano. Add melted butler, chablis, egg and milk. Beat until blended. Ibrn into 12 well-greased muffin cups or well-greased 8" round cake pan. Sprinkle with parme- san cheese.
