USDA revises directions for canning garden tomatoes With tbe tomato season upon us, many people are turning their thoughts and their energies toward preser­ ving their bountiful harvest. And eyen though it means long hours in a steamy kicnen now, the tangy Juices and savory sauces next winter will be a just reward. Using safe canning practices now can en­ sure that all your hard work doesn't go to waste later in spoiled Jars. According to Carla Fulton, home economist with the Kane County Cooperative Extension Service, the U.S. D e p a r t m e n t o f Agriculture recently published revised recommendations for proper processing times for tomatoes and tomato Juices. "If you take all proper precautions and heat the filled Jars long enough, none of your tomato products should spoil," Fulton said. Winning formula found for annual 'Taste of Dundee' Here are the USDA's new recommendations for boiling-water bath processing times: Tomatoes, Whole or quartered -- pints 35 minutes, quarts 45 minutes. The reason given is t h a t t o o m a n y vegetables would over­ come the acid from the tomatoes and lower the acidity to the point that botulism toxins might be produced. M o s t t o m a t o e s available today for home gardens are high- acid varities. Even those that are labeled at 'low-acid' really have the same acidity level. They Just have more sugar to cover up the taste of the acid. However, some of the varieties grown for commercial canning plants are low enough in acid to pose dangers for the home canner. If you live in an area where tomatoes from commer­ cial canneries are available at roadside stands, you would be well advised to take ex­ tra precautions. That would mean that you should add acid or pressure process your tomatoes. If your Choose to pressure process, 10 minutes at five pounds pressure is sufficient for tomato Juice, sauces and tomato-vegetable juice blends. Whole or chunk tomatoes should be processed, for 10 minutes at 10 pounds pressure. If you would rather add acid, V« teaspoon citric acid (available at drugstores) added to each pint of tomatoes generally gives the best- tastlng results. To neutralize the sour taste, you can add 1 teaspoon of sugar as well as the citric acid. Some people prefer the sourness of lemon juice, which is also acidic. But if you use lemon juice, you need to add 2 teaspoons per pint of tomatoes. Vinegar is not as effective and generally gives a flavor that most people find ob­ jectionable.
