Time t' put away tn' things t' tide us o'er th Kings S'oodi se f'r me ago, an' seems f'rgotten, as word comes t' this granny, that some readers'd like V know how we managed t' glean th' last bit o' good from most ever'thin', when th' pocket-book was mighty thin, in those years, durin' th' depression o' th' thirties. Wi' two tots t' pare f r, an' try t' make a home fr us wi'out their daddy, bein' he was in th' hospital fr so many years, this ol' lady wonders how in th' world we made it, but we did, an' no regrets. It takes a lot o' doin' an' ingenious ways t' manage, an' no one c'n tell another how. It takes each o' us, t' use th' talents we're endowed wi', an' ekercise 'em every day, in every way we can. One day, reminiscin' about those days, me son reminded me "I remember, Mom, how you used t' mend our clothes, an' when th' mends wore thin, ye mended th' mends." That's ui' way it was, but we didn't mind, as long as we could be together, an' make a happy home. , Ever' time this granny hears o' couples a spliran' up, an' many wi' younguns, this ol' lady's heart skips a beat. Vows taken in marriage don't seem t' mean much anymore, an' folks don't seem t' try as sincerely t' e another t' know one i gether. Now, we know an' grow 4ow, we know that women were more adept at makin' it work, fr th' reason that th' good Lord made 'em t' be mothers, an' endowed 'em wi' jth' ability t' This granny used th' peelin's t' make jam an* apple butter. Ye'd be surprised how much meat is left on th' peelin's. Ye wash th' apples real good an" put th' peelip's in a pot, barely cover wi' water, an' cook until they're soft; simmerin' f'r about half an hour after bringin't' a boil. Then press through a sieve, measure th' pulp anr add sugar, cup fr cup. *niis makes a delicious Jam. > long an' careful simmerin' 'til it gits real thick. Ye take about four gallons o' sliced apples, a gallon o' sweet cider which as been boiled until about half th' amount: add th' apples an' cook carefully to ,pot burn, until thick. Then add about two pounds o' brown sugar an' a idapt Seems t' this person that th' efforts ft' make things more equal f'r women ha* boomeranged, an' back-fired on th' offspring, leavin' 'em t' pick up th' broken pieces o' their lives. Seems like women ha' tost th' art o' their heritage, just a bein women, an' mothers, an' not just sex-symbols. Oh! Yes, there are some who toiler th' ways o' their forebears, but me wonders how th' younguns'U know how wi'out th' teachin'. * Well, so much f r th' disturbin' conditions besettin' society these days. A gittin' back t' some o' th' things this granny did t' save all th' good from th' bounties which the Lord pervides, it comes t' mind how some good things from apples teaspoon each o' allspice an' cloves ft' taste. Ye may use either cloves 'r allspice, if yt don't care f'r both, but cinnamon is th* necessary spice. Careful watchln' 'n stirrin' almost constantly, is essential. This granny used a long handled pancake turner wi' a straight edge, as it kept th' apples on th' bottom o' th' kettle from burnin'. Seems t' me, folks want things done so fast these days, they may not ha' th' patience it takes t' turn out a batch o' good apple butter, but ye can't buy any in th' store like th' kind we used t' make. It takes brown sugar t' make it real good, but ye may use part granulated sugar, but not quite as much. Now, try it, an' enjoy, now' that apple time is here again. Happy eatin'.
