In the early log cabin years before the Civil War, home cooking was done in pots, pans and kettles, most of which had < been adapted with long handles £ or feet to be used in open fire £ places. This hardly provided for < the even temperatures needed S for such things as bread as we / know it today. Thus, pan bread Taaked in a kettle or spider knot loaf bread was common to such settlers as the Gillilans who came to Alonquin in 1834 or the Read family of Union who came in the 1840's. The first settlers made one-dish meals which required little attention and freed up the housewife for other chores. Among the things they made or harvested wene apple butter, fried prairie chicken and passenger pigeon pie. Hie Fox Riyer yielded a variety of fish and wild fruits; provided \the bounty for such things as deep dish plum pie and jellies and preserves. Corn meal mush and Indian pudding made use of one pioneer staple -corn. Because such things as tea and coffee were very expensive, other things like mint or sage and other herbs were substituted for tea, while roasted barley commonly passed as a sub stitute for coffee. As changes were made in the devices used for cooking and preserving food, changes also developed in the manner of feeding families and also in the foods people ate. Singer Steve Goodman to perform Chicago born singer- composer-guitarist, Steve Goodman, will perform his wide variety of songs, wit, and guitar playing, at the Woodstock Opera House, in one show only on Wednesday May 23, beginning at 8:15 p.m. Goodman, who now lives in California, is a singer in the tradition of Pete Seeger and Woody Guthrie, and is best known as the composer of "City of New Orleans". After eight albums, appearances on television shows and per formances with such artists as Steve Martin, John Prine, and Kenny Loggins, Goodman is an entertainer who leaves his audience with an inner feeling that few could match. Opening the show will be a duo from Chicago, "Tricia Alexander and Lori Noelle", who one critic has termed "One of Chicago's most entertaining duos." Over the last five years Tricia and Lori have been en tertaining audiences by com bining harmony and humor. Woodstock audiences will remember them from the "Concert for Special Olympics" in February. Most recently Tricia and Lori opened for west coast comedienne, Sheryl Bernstein. The Woodstock Opera House is on the square in Woodstock. Tickets are on sale at the Opera House ticket office.
