That's not always true, ac cording to McHenry County Extension adviser Nancy Moore. She says dented cans can be a good buy if you know what to look for and what to avoid as you shop. Here's what to check for: N 1) Never buy food in cans or jars that have bulging ends. These are definitely unsafe. Bulging cans of beer and car bonated drinks are the only exceptions to this rule - they should be safe because their contents are under pressure. 2) Never buy cans or jars if the pull-top tabs have been loosened or if the lids look at all like they have been opened, loosened or tampered with. 3) Never buy cans or jars that are leaking. Containers with any of these three signs should be given to the store manager, Moore said. A few little rust spots present no problem ̂and the food in the can is probably safe. 5) If the can has a flat side or a dent on the side, but if otherwise okay, its contents are probably safe. 6) If a can is damaged on the ends so that the folded seam where the end and the side of the can meet is damaged, it is probably not a good idea to buy it. This oid seam is more likely to leak than a side seam, so damage to it is more dangerous. Pinhole leaks like this cant always be seen, but can still cause the contents to spoil. "Store-bought canned food will be safe and nutritious as long as the can does not leak," Moore said. "But after about a year, the quality of the food will start decreasing, color will change and flavor might change. These changes will not be harmful - just not appetizing. Keeping cans cool and dry will preserve the foods' quality for a longer time." If the inside of a can has black or purple stains on the metal when you open it, but no other signs of spoilage, it's still safe. These stains are caused when protein or acid in the food reacts with the metal in the can.
