The result is Thai Satay More, which opens just in time for the Oakville Waterfront Festival. Kernot has revitalized space on Cross Avenue near the Driver Examination Centre and turned it into an elegant dinâ€" ing spot accented with Thai masks, artwork, and gold and purple decor. In the spotlessly clean kitchen, combinations of spicy sauces and carefully prepared vegetables and morsels of chicken, shrimp, fish, beef and pork will be prepared fresh daily, and Kernot has imported expert talent from Toronto‘s Thai eateries to accomplish the task with ease. "Thai food is the food of the century. It‘s fresh and light, healthy because most of the dishes are low in fat, and it tastes best when it‘s prepared fresh, which we will do every day," promises Kernot, a longtime fan of Thai cuisine. Appetizers include the everâ€"popular Satay â€" skewered pieces of chicken or pork charâ€"broiled and served with a delicately spiced peanut sauce, in addition to fresh, or crispy spring rolls, shrimp chips and peanut sauce, Mussels ‘the Thai way‘, and Garee Puffs: a mild and sweet Thai curry blended with chicken and potato, encased in a biteâ€"sized pastry shell. Kernot plans to feature one or two special dishes daily, but says there will be many dishes showâ€" casing green and red Thai curries, and Pad Thai â€" Thailand‘s most popular stir fried rice noodle traditionâ€" ally served with chicken, shrimp, egg, bean sprouts, peanuts and Thai spices, of course. Try a cool yet spicyâ€"warm salad, such as Som Tum or Yum Mamuang â€" shredded green papaya or mango in a light Thai seasoning. Or delve into a bow! of Tom Yum â€" fresh lemon juice and a smooth chicken stock comâ€" bined with Thai spices and pastes, with tender morsels of chicken, mussels or shrimp. Crispyâ€"skinned baked whole red snapper is served with your choice of a sweet and sour tamarind sauce, with a smooth red Thai curry, or with a combination of finely chopped chilies, peppers and garlic. There are also rotisâ€" serie and charbroiled specialties, and vegetarian selections such as Pad Muk Kua, â€" stirâ€"fried eggplant with basil and chilis which Kernot says is guaranteed to impress. "I invite everyone to come in and try it for themselves," the owner says. Desserts will consist of fresh fruit with dips, fruit ices and other light refreshers. Specialty coffees and teas by The Second Cup will be featured, including iced coffee and tea. Takeâ€"out and catering will also be available.
