CM to I s 3 ·-- » Back breaking labor to tend Porto vineyards For the reds the Touriga Nacional is the most important variety followed by Touriga Francesca, Tinta Roriz, Tinta Barroca, and Tinta Cao. For white ports, the most used variety is A rinto and Malvesia Fina. Down in Porto the wines are aged, still in their "pipes", in large cellars, the " lo d g es". The long history o f those wines had little significance until the second half o f the 17th century when Britain signed a trade deal that gave the wines of the Porto Region some prefer ential status. Today, some of the larger Port houses are still in British hands, with the rest being privately own by local Portuguese families. Porto, Portugal... Years ago, the Port Wines were loaded onto sailing barges I and transported down the Douro River to c the ancient port city of Porto. The Pipes, u. 550-litre standard oak barrels, are still in use today although the method of trans portation has somewhat changed, and trucks are now used. What has not changed, however, is the back-breaking manual labour needed to tend the vineyards and produce the young wine in the Quinta, the local win ery. Also changed is the assortment of grape varieties used today to create the Port wines. Whereas in times past, over 100 sorts had been permitted, only five red and white varieties are in used today. Wine Cellar Alex Eberspaecher several blends. Rubys are usually sweet and relatively young. They have been aged for three years in wood before being bottled. Although still young, they are ready and delightful to drink when bottled and sometimes used in cocktails. WOOD-AGED Next on the list are the Tawny ports which are also aged in cask but much longer. They are more elegant than the Ruby and much lighter in color, more orange to yellow instead o f the ruby red. Usually half dry to sweet, theyy reach the highest quality with a bmt of burnt topaz. These are ports produced during an out standing vintage year, rich in color and full-bodied. The wines are bottled early in the third year and left to age, whatev er aging there is in a bottle. Vintage ports will have an indication on the label as to the year of harvest and often the Quinta where it was produced.
