(30 mL) butter 2 thsp. (30 mL) flour 1 cup (250 mL) Fish Stock 1 thsp. (15 mL) fresh dill, minced 1 1/2 oz. (50 g) dill Havarti, crumbled 1 egg yolk 1/4 cup (50 mL) heavy cream 2 salmon fillets, 6 oz. each (180 g) Preheat oven 450° F. Melt butter in small saucepan. Add flour, blending to form roux. Pour in fish stock and dill, whisking to blend thoroughly with the roux. Bring to boil, stirring occasionally. The sauce will thicken just as it reaches the boiling point. At this point, lower the heat and simmer gently and stir occasionally while the cheese melts. Blend the egg yolk with the cream and stir this mixture into the saucepan. Heat gently, preventing the sauce from boiling, as this will curdle the egg yolk. Keep warm while the salmon cooks. Place fish fillets, skin side down, in a lightly greased baking dish. Bake at 450° F for 10 minutes per inch of thickness of fish. To serve, pour somé sauce onto two heated plates, covering the bottom of each place completely. Add a fish fillet to each. Garnish with a sprig of dill. Yield: 2 servings What‘s Cooking?
