Slash centre to form a large cavity; wash thorough- ly. Mix remaining ingredients and stuff cavity lightly with the dressing; skewer or sew. Sprinkle with salt and pepper and roll in flour. Place heart on a rack in an uncovered roaster and bake in a moderate oven, 325 deg. F., until tender--2 to 2% hours for calves' heart, 344/ to 4 hours for beef heart. Baste occasionally, adding a little hot water if necessary. Kidney Stew 1 ib. beef kidney 2 cups boiling water % teaspoon salt 1 cup diced carrots *Y4 cup chopped onion 3 tablespoons flour 1% teaspoon salt 4% teaspoon pepper 2 tablespoons mild-flavored fat Wash kidneys. Into boiling, salted water put carrots and onion. Cover and cook until tender, about 15 min- utes. Split kidneys in half, length- wise. Using scissors, remove white centres and tough membrane; cut in small pieces. Dredge in flour, season- ed with salt and pepper and brown quickly in hot fat. Remove kidney from pan, pour in water from carrots and cook until thickened, stirring and adding extra hot water. Add carrots, onion and kidney and cook about 25 minutes or until tender. Serves six. * May be omitted if not available. Sunshine Liver 1 Ib. beef or pork liver 3 cups soft, stale bread crumbs *14Z cup minced onion 1 egg 4 tablespoons flour 1 teaspoon salt 1% teaspoon pepper Scald liver for 5 minutes in boiling water, drain and grind. Mix all in- gredients together and shape in cakes to fit muffin tins. Roll in a little flour, place in muffin tins and brush with a little melted fat. Bake in a hot oven, 400 deg. F., for 10 minutes. Turn out on a serving dish and serve with the following sauce. * May be omitted if not available. Sunshine Sauce 1 cup milk 1 tablespoon fat 1% tablespoons flour Salt and pepper to taste 1 cup grated raw carrot Heat milk in double boiler. Melt fat in seaucepan, blend in flour, salt and pepper. Gradually stir in the hot milk. Cook until smooth and thick- ened. Add grated raw carrot and serve immediately.
