Gradually add milk, stir over direct heat until thickened. Finish cooking over hot water. Cook carrots until tender in salted, boiling water in lower section of double boiler. Fold in the stiffly beaten egg whites, turned into greased baking dish and cover lightly with butttered crumbs. Bake in a moderate oven, 350 deg. F., for 50 or 60 minutes. Six servings. Vegetable and Noodle Plate 1 pkg. (80z.) noodles 2 tablespoons mild-flavored fat 1 cup fine dry bread crumbs y, éup mild-flavored fat 1-3 cup flour 2% cups milk 1 teaspoon salt 1-8 teaspoon pepper 2 eggs % cup mild vinegar 1 teaspoon mustard 6 whole carrots (cooked) 1 small head cabbage, (cooked, in 6 wedges) Cook noodles in rapidly boiling salt- ed water and drain. Melt the 2 table- spoons of fat in top of double boiler, add bread crumbs and brown. Add the noodles and mix well. Keep hot. Melt remaining fat in top of double boiler, blend in flour, add milk and cook over low direct heat, stirring constantly un- til it thickens. Mix beaten eggs, vine- gar and mustard with some of the hot mixture. Return to double boiler. Cook over hot water three minutes. Arrange vegetables around noodles on serving dish. Pour sauce on noodles. Six to eight servings. Fried Cabbage 3 tablespoons mild-flavored fat 6 cups shredded cabbage Salt and pepper to taste. 2 tablespoons vinegar Melt fat in pan, add cabbage and cook slowly 10 minutes.
