The protective covering of the cord may be ripped and a scary shock in store for whoever touches the exposed wires. 3. Cords placed should never be where they are apt to be tripped over. Tacks should not be used to hold down cord. The metal tack may break through the insulation and cause a short circuit. Bring the syrup to a full rolling boil and seal it at once in sterilized glass sealers. Rhubarb was often known as 'pie plant' by our grandmothers and this old name is still used in some parts of the country. Restricted, as they were in the early days, to dried apples and dried pumpkin for their winter fruits, the luscious juciness of the first rhu- barb must have been welcome indeed. New recipes starring the first of our spring foods come from the testing kitchen of the Consumer Section, Do- minion Department of Agriculture. Rhubarb Muffins 1% cups sifted all-purpose flour 4 teaspoons baking powder % teaspoon salt 2 tablespoons sugar % cup milk 1 eggs 1 cup cooked rolled oats (leftover porridge) 2 tablespoons melted fat 1 cup uncooked rhubarb, cut in small pieces Mix and sift flour, baking powder, salt and sugar. Add half the milk, the well beaten egg and the remaining milk mixed with the cooked rolled oats. Mix only enough to combine. Add the melted fat and rhubarb and fill greas- ed muffin tin two-thirds full. Bake in a hot over, 200 deg. F. for 25 minutes. Makes 12 medium muffins. Rhubarb Juice 4 cups cut rhubarb % cup boiling water Do not peel rhubarb. Bring rhubarb and water to a boil and cook slowly 5 minutes. Strain through a jelly bag. The juice will keep several weeks in the ice box or it can be poured into sterilized bottles partially sealed -nd processed for 30 minutes in the boiling water bath. It is excellent for flavoring and bringing refreshing tartness to deserts--and fruit drinks. Makes about 2 cups concentrated juice. Quick Maple Pudding 1 tablespoon butter 3 tablespoons sugar 1 egg 1 cup sifted all-purpose flour 2 teaspons baking powder 1-3 teaspoon salt ¥% cup milk 1 cup maple syrup Cream butter and sugar thoroughly, add well beaten egg. Mix and sift flour, baking powder and salt and add alter- nately with the milk. Pour maple syr- up into a greased baking dish and add batter. Bake in a moderate oven, 350 deg. F. about 25 to 30 minutes. Turn upside down on serving dish and serve hot. Six servings. Maple Sauce 2 teaspoons butter 1% teaspoons cornstarch Few grains salt 2-3 cup maple syrup 1-3 cup water Melt butter and add cornstarch and salt. Combine maple syrup and water and add slowly, stirring constantly. Bring to boiling point and boil 1 min- ute.
