Some of these nu- trients have very high-sounding names like Pherylalanine! But who cares about that? In our own simple cookery language the facts are that eggs contain protein and therefore they may be used as an alternative to meat. Care of Eggs.--The longer eggs stand at room temperature the quicker their deterioration. Put them straight into the icebox without washing and they'll keep perfectly for a week or more. f you want to keep them longer "a coat of vaseline rubbed in completely will keep them for weeks if they're stored in a cool cellar. You can tell the quality of an egg as soon as it.is broken. In a good fresh egg the white is thick and the yolk stands 'up about the white. Cooking of Eggs.--It is not simple to cook eggs properly. Always remem- ber a low temperature is essential -- 'yes, even when "boiling." Lower them into boiling water and then reduce heat so that they only simmer. High temperature toughens the white and cooks the egg unevenly. Remember, too, that eggs continue to cook after they are removed from the heat, so, in whatever form, they should be served immediately. Cracked eggs may still be boiled if rubbed with moistened salt. Yolks will stay in the centre of hard-boiled eggs if you turn them around occasionally as they boil. Save those egg-shells (unless they've been colored for Easter). Dry them on top of the stove and when dry crush them with a rolling pin. Use one tablespoon of crushed egg-shells to one cup of water for cleaning badly stained bottles or vases. Just shake well until stains disappear. Also a quick method for cleaning milk bot- tles. If eggs are placed in cold water for a time before using they will whip very easily. The quickest way to separate an egg-yolk from an egg-white is to break the whole egg into a bowl and just lift out the yolk with your fingers -- always provided your hands are spot- less! BODILY WARMTH AND THE MILK DIET Perhaps one of the best means of increasing the vitality in order to accelerate the circulation and thus add to the internal warmth of the body is the milk diet. The assimilative powers of many persons are so much inferior to what they should be that even when such persons follow the most rigid rules of proper living, it is sometimes difficult for them to avoid a sensation of chil- liness when compelled to endure even an ordinary amount of cold. In these cases, an exclusive milk diet is a veritable boon. It seems to so build up the functional powers that the bodily warmth -is increased al- most immediately. We have had considerable to say about the milk diet recently, and it is hardly necessary to add thereto. However, special stress must be laid on the fact that it is useless to expect results if any other kind of food is taken with the milk excepting, of course, acid fruits. With most per- sons, fruit acid is necessary in order to digest the milk.
