The home economists of the Con- Sumer Section, Dominion Department of Agriculture, offer some rhubarb recipes that will not make too great a dent in the sugar ration. To Prepare Rhubarb Pour boiling water over cut rhubarb, let stand for five minutes. Drain and cook without additional water. Two tablespoons of sugar to one cup of diced raw rhubarb is usually sufficient for palatability when rhubarb is very young and mild. The sauce will taste sweeter if the sugar is not added un- til after the rhubarb is cooked. Rhubarb Sauce 6 cups rhubarb % teaspoon salt % cup sugar . Wash rhubarb, cut in 1-inch pieces but do not peel. Cover with boiling water, let stand 5 minutes, drain well. Complete cooking by using one of the following methods. : Double Boiler Method: Cook rhu- barb with salt in a closely covered double boiler for 35 minutes. Remove from heat. Add cold milk slowly, stirring until smooth. Add boiling water and cook in the top of double boiler, stirring constant- ly until mixture thickens. Cook slightly and fold into stiffly beaten egg whites. Turn into a wet mould and chill. Unmould and serve with rhubarb sauce. Six servings. Rhubarb Bread Pudding 2 cups diced rhubarb 2 cups boiling water 4 tablespoons sugar 4% teaspoon salt 1 egg yolk 1 cup milk 2 cups bread cubes 1 egg white Pour boiling water over diced rhu- barb and let stand for five minutes. Drain... Add sugar and salt and let stand for 10 minutes. Beat egg yolk, add milk and pour over bread cubes, then add rhubarb mixture. Fold in stiffly beaten egg white. greased baking dish and bake in a moderately hot oven, 375 deg. F., for one hour. Six servings.
