If you‘d serve cauliflower at its snowâ€"white, crispâ€"tender best, have the boiling salted water ready, perhaps, but delay cooking this delicate snowball of a vegetable until you know that everyone is on hand for dinner. Cauliflower is one of those white vegetables which can pick up an unattractive . yellowish cast . if tooked in "hard" or alkaline water. Add a teaspoonful of fresh lemon juice to the cooking water and the cauliflower will stay nice and white. < It‘s wery easy to overâ€"cook caulifliower and since it tastes as good raw as cooked it‘s a mistake to give it "just another minute" of cooking lest it be underdone. It‘s also a mistake to cook it tos far ahead of time and try to keep it warm. Fresh caulifiower is one of the many convenience vegetables. Rinse it and trim away the heavier leaf stalks, but, if you‘re cooking it whole, do retain those decorative little green leaves which clasp the head â€" the leaves are completely edible. A whole head of cauliflower needs not more than 25 minutes total cooking time. Set it in a 1â€"inch depth of boiling saited water. Let cook 5 minutes without a lid, then cover and cook another 15 to 20 ‘minutes, depending on: size of head. â€" Thinly sliced, caulifliower is a nippy addition to a. tossed green salad. Good, too, as a "pickâ€"up" "But Why Can‘t You Speak?" Elzbieta (Janet Youngberg) asks the Nightingale (Andrew Kirkpatrick), as her mother (Eleanor Yarish), father (Dudley Doughty) and boys Michael and Pawel (Russell and Stephen Hawkins) look on. Ak. 147. $31. Several clergymen of various denominations stregsed the importance of premarital counselling which they thought should be made compu!â€" sory, if such Jegislation materialised, but the official attitude of the church to sex is still so archaic that the usual Christian premarital courses given consist of some useful and concrete information about budgeting and living within your income and great deal about honouring and loving your partner and being a Christian husband or wife, but nothing about sex which is more what teenagers have in mind when they marry. Even if you could force the average teenage bride and bridegroom to attend these lectures, they‘d get little specific help and anyway they are already convinced that their marriage won‘t fail because they‘re different. And so, heaven help us, are we all. What might help would be a bangâ€"on, spelled out, up to date course on sex, venereal diseases and the use of contraceptives in the last two grades of high school. By that age, most of our teenagers have had some mild o# major brushes with sex and it‘s a subject they‘re interested inâ€"this is the time to teach them something that will be helpful to a teenage marriage. Of course, the theory held by nice people is that our youngsters should have no need of this information until they are married, but dear Augusta, there never has been a time when young people weren‘t interested in sex before they got married (in fact, this is what spurs most of themâ€"into matrimony, in the first place) but the difference today is that the age is earlier and the interest more open and acknowledged. It probably isn‘t a good thing (too early sampling of life‘s most important experiences makes for boredom later on) and it certainly makes a parent‘s life more perilous since it‘s probably our fault (most things are), but whether we like it or not, this is the situation and we should be realistic about it. Where a lot of middleaged people make a mistake is in assuming that today‘s male teenagers (from 15 on) can‘t behave honourably in any situation because they have long shaggy hair, smoke, read "Playâ€" boy" and obviously aren‘t gentlemen (as we think of them.) But just as they have their own music, they have their own code of honour and they‘re not all ratfinks by a long shot. I know half a dozen teenage boys reasonably well and I am sure that if one of them got a girl into trouble (in the classic phrase), he would stick by her, acknowledge his responsibility and do what he could to make amends (by which 1 don‘t necessarily mean marriage) without expecting his parentsâ€"to floulder the burden. This is what I would consider acceptable behaviour in such a situation. Personally, I feel that sex (and kmoking and driving, to a lesser extent) are aetivities that should be left until the teenager has left school and is independent of his parents, but the trend today is to enjoy as much as possible as soon as possible, and neither my personal feelings nor the wellâ€"meaning efforts of the clergy will do much to change that By JOAN SEAGER 250 PER WEEK
