Fruit Cake (may be used as wedding or Christmas 1 lb. of butter 1 lb. brown sugar 2 tablespoons lemon juice 3% cup brandy y cup apple jelly 3 drops each of pineapple lemon & orange extract 1 teaspoon vanilla 4 cups flour 1 teaspoon cinnamon 1 teaspoon nutmeg 1 teaspoon baking soda % teaspoon baking powder % teaspoon salt 1 lb. glazed cherries C 4 pineapple rings 1 tablespoon candied ginger 3 lbs. seeded raisins 3 lbs. seedless raisins 1 lb. of dates 1 lb. of almonds 1 lb. citron Wash and dry all fruits day before, cut citron, dates, pineapple and ginger into small pieces. Cook over hot water, stirring constantly, until thickened. Add softened gelatin; stir until dissolved. Remove from heat, stir in pineapple. Beat cream cheese; add to pineapple mixture. Chill partially. Beat egg whites until frothy. Beat in remaining % cup sugar. Fold into parâ€" tially chilled gelatin mixâ€" ture; pour into prepared pan. Chill thoroughly.
