Moisten the cake with cold water, press icing upon it and let stand twentyâ€"four : hours before covering with other icing.. Icing may be shapâ€" ed with the hands to fit the cake. Many, however, may welcome having the reâ€" cipe. 1 Ib. butter, 1 lb. brown sugar, 12 eggs, 1 lb flour, 3 tsp. cinnamon, 1 tsp. mace, 2 tsp. allspice, 2 tsp. nutmeg, 14 tsp. cloves, 3 lbs. raisins, 1 lb. currants, 4 lb. dates, i 4 lb. shelled almonds, 1 lemon, juice and grated rind, 4 c. cold coffee (scant), 4 c. preserved fruit juice (scant), §% lb. citron peel, â€" % lb. lemon peel. Line the pans with three thicknessâ€" es of paper; butter the t(\)p Jlayer only. Seed the raisins and tear in quarters; wash and dry the currants; stone the dates and cut them in small pieces. Blanch and chop the almonds; . cut citron and lemon‘ peel in thin slices and then in small pieces. Mix the nuts and fruit (except peel), and dredge with 1â€"3 c. of. the flour. Dredge the peel with flour separateâ€" ly. Mix and sift remaining flour with the spices. Cream the butter, add sugar, yolks of eggs well beaten, then whites of eggs ‘beaten . stiff, lemon juice and rind; beat thoroughly. Add liquid and sifted. flour alternately, beat well then add fruit. Put a layer of the mixture into the pan, then a layer of the peel, repeat until the pan is twoâ€"thirds full; have cake mixture for top layer. Bake in a slow oven for 3â€"4 hour or steam three hours and bake 1% hours in moderate oven.
