"Hardtack", the bane of serâ€" vice personnel for decades, is on the way out. Food technoloâ€" gist Joseph Hulse and baker Joseph Galbraith, of the food research group of Defence Reâ€" search _ Medical Laboratories, Downsview, Ont., have created a prepared mix which, whien combined with water and ba in an oven, produces a high qu@lity bread in less than t hours, cutting about four hours from mother‘s ageâ€"old methods. The new mix is the scientists‘ answer to the problem of storâ€" ing and keeping fresh sufficient quantities of bread to feed the crews of smaller naval vessels on lengthy absences from port and members of the forces serving in isolated areas. Months of experimentation went into the development and testing of the new mix. The result is a product which comâ€" pares favourably with standard commercial bread. One of the primary advanâ€" tages of the preâ€"mix is the reâ€" duction in preparation time to about oneâ€"third of that required in previous methods of bread making.
