Served in a contrasting dish, a sfice of tomato, a sprinkling of chopped chives or green onions, a littie parsley or sorne buttercd breadcrumbs can make ail the dificrence. This crearny version of an old standby is prepared with Holland importcd Gouda and toppeci \ith browned buttercd breadcrunibs, sliced tomatocs and a parsley sprig. 1 (l lb. 14 oz.) imported Holland Gouda 1 cup uncooked macaroni 2 tablespoons butter or margarine 2 tablespoons chopped onion 2 tablespoons ail-purpose flour 2l",~ cups milk V easpoon white pepper cup cracker crumbs 1 tablespoon butter tomnato suices for garnish, parsley sprig Grease bottom and sides of 111 or 2-quLart casserole. Cook macaroni in 4 cups boiling water wvith 1 teaspoon sait. 15 minutes until tender. Drain, With a paring knife and firm- handled spoon scoop out centre of Gouda leiiving -a half-inch sheil. Shred enough scooped out cheese to ruake 2 cups shredded Gouda. Wrap and store the remainder; use later for sandwiches or cube-style appetizers. Preheat oven to 3000. ln saucepan nmeit butter; cook onion until transparent. Biend in flour; stir in milk. Cook, stirring constantly until mix- ture thiekens. Add shredded imported Holland Gouda. Re- move froîn heat and stir until cheese meits. Season with white pepper. Add drained macaroni and mix to coat mac- aroni wit-h cheese sauce. Coat greased casserole with crunîbs; place Gouda shell in casserole. Fi with Gouda and macaroni mixture. Garnish with tomnato slices. Sprinkle with remnaining crumbs. Dot with butter. Bake for 45 min- utes, Just before serving top with sprig of parsley. Makes 4-6 servings. .oX..4 . Whitby.Girl Wins Speaiking Contest A capable young orator, Barbara Elliott, 13, a grade 8 student at Whithy Senior public school, won the zone oratorical contest for senior grade school students in Victoria, Ontario, Haliburton, and York counties and the honour of representing these four counties in the 1974 provincial final public speak- ing competition. Four talented young ladies who were district final winners from senior elemen- tary schools in the four counties, took part in this zone (provincial semi-final) oratorical contest, held on February 27th at Dunharton high school, Pickering Town- ship, Durham Region. S.G. Saywell of Oshawa, Zone Director of the Ontario Public School Trustees' Ass- ociation, was the capable chairman for this zone oral communications contest. The attractive winner, Barbara Elliott, displayed ex- cellent poise and was very fluent. Her talk was entitled "Women's Liberation"". This talented young lady impress- ed the audience with her logic.
