Ilere we go: you will need glasses of a simple shape, plates, knives, corkscrews, ice and ice con- taliners for the white and rose winies whichi are to bc served citlled. Red wines are served at rooni teruperature cxcept for Beaujolais whiich should be cool cd. The most important part is the selection oft the wines and cheeses. In France wine and cheese are called inseparable friends, thiis nmeans thiat the flavour of the cheese compli- ments the bouquet of the wine. 1 allowed six ounices of cheese and onie bottle of wine per guest whichi is generous but flot excessive. Your guiests siotld not be given the impression that they are expected to drink too miuch, nor should thiey be allowed to go aw7iy thirsty. 1 presented each cheese type on a ditierent tray wîth its coillleien tary wine beside it. The Alsace regioni wtîiclî spreads atong the Frencth bank of the RUine produces dry, fresh, fruity wines. The final tray consisted of a variety of processcd cheeses. Att cheeses of this type are a blend of various kinds of cheeses metted together and to which butter, rnitk or cream are added. This particutar assortment was rmade up of different cheeses which have the Advantage of being atready in portions such asix d savoie, vache qui rit etc. Having already two red and two whîite wines I chose an Anjou rose to complirîient this tray.
