Carrot Cake 1 1/2 cups salad oil 2 cups sugar 4 eggs 2 cups fiour 2 tsp baking po wder 1 tsp cinnamon 1/2 tsp baking soda 1/2 tsp sait 2 cups finely grated Ontario carro ts(4toS5) 1 tsp vanilla B eat together oil and sugar. Add eggs one at a time beat- ing until creamny. Beat in sifted dry ingredients. Fold in grated carrots and vanilla. Pour into a greased 9x 13x2" pan. Bake at 350 degrees F for 40 to 45 minutes. Ice when cool. Keep refrigerated. Icing 1 pkg. (4-oz) cream cheese, softened 1/4 cup butter 1 cup icing sugar 1/2 tsp vanilla Beat cream cheese and butter until fluffy. Beat in icing sugar and vailfla until welI combined. Vegetable Meat Loaf 1 1/2 lbs ground beef 1 med. onion, finely chopped 112cup chopped green pepper 1/2 cup chopped celery 2 cupsgrated Ontario carrot., 1 cup fine bread crumbs 1 egg (lightly beaten) i1/12 tsp sait 1/4 tsp pepper 1/4 rsp dry mustard 1/8 tsp cayenne 1/2 tsp Worcestershire sauce 1 can (JO-oz) tomnato sou p. undiluted Combine ail ingredients, blending thoroughly. Press into greased 1 1/2 pt. casse- role dish or loaf pan. Bake at 350 degrees F until done, 1 1/4 to 1 1/2 hours.
