In fact, many nutri- tionists declare that we're going through the "protein" era. There's no doubt about it- nutrition science has proved that plenty of protein is a must for healthy living. Oneof the besi definitions for protein is "the stuff our bodies are made of". Protein is found in every living cel-Iln hair, bonies and muscles. As we grow and get older, new body tissues are formed.and worn-out tissues must be replaced or rebuilt. Food protein is the main material in the ceIls ln these tissues. Actual ly, what we caîl a single material - protein - 15 a complex combination of several substances called amino acids. If a food contains a fairly high percentage of these sub- ,stances, it is usuaîly referred to as a "protein" food. Different protein'foods contain different assortments of the amino acids. There' are many of these amino acids, but a food's rating as a "complete" or an "incomplete" protein food depends upon its content of eight building blocks known to be essential for health. Most animal foods, like meat, fish, poultry, eggs and milk are "complete" protein foods and thus are excellent mealtime choices. Cereals and some plant foods, like peas, beans and nuts, are "incomplete" protein foods, because they lack one or more of the eight essential amîno acids. Science has shown that animal and cereal proteins, WHEN EATEN- TOGETHER, provide better nutrition than either type does alone. Thus we are wise to balance our intake of animal protein foods with pienty of whole grain cereals and whole wheat, rye and enriched white breads. Protein has other uses than as a builder of body tissue. It can also provide a generous amount of energy when digested. and oxidized (burned> in our bodies. ,.Equaî weigh ts of protein and carbohydrate (sugars'and star- ches) produce, exactly the same number of c alories (or energy)- four per gram. If an excess of energy -calories is» produced by eating more protein or morecarbo hydrates than we need, the extra will be stored as body fat. In other words- where protei n is concernied, enough of a gpod th ing is enough!1 Excesses, in the form of body fat, may be dangerous-to health. Fortunateîy, protein is widely distributed in cur common foods. Aîthough complete (animal> protelns are usualîy more' expensive to buy, their cost as' weII as their food value may be counterbalanced by using plenty of comparativeîy inexpensive cereals and breads. A simple daily protein "check chart" for aduits wiII show check marks opposite these foods: one ser-, ving of whoîe grain cereal, at Ieast four slices of enriched or, whole grain bread; one serving meat, pouîtry or fish; one ser-» ving of either, eggs, chéese or legumes; and 1/2 pint of miIk, (more for children, adolescents and pregnant and nursing mothers>.
