Without them, one day in a "hangry" moment and you'll succumb to high calorie, low nutrient-dense foods (or is this just me?). Junk food, in moderation, is not the worst thing to give in to. However, when it becomes constant, it's expensive and doesn't provide you with great nutrition. I understand how hard it is to juggle kids, partners, career, and personal time. When my kids were young, I tried to plan weeknight menus that were easy, fast, and healthy. I liked to cook meals I could whip up in 30 minutes and saved the more complicated recipes for the weekend. Today my favourite fast meal blog is called "The Minimalist Baker." All her recipes are 10 ingredients or less and can be made in 30 minutes or less. It takes half that time to sit in the drive-through line of a fast food place and eat questionable ingredients. Here are some tips on how to plan for meal success: Prep food for the week on Sunday afternoons. Double and freeze any recipe that you can. Use recipes that can be used for different meals. For example, chili can be eaten as is one night and then used in a burrito or rice bowl the next. Brown rice is a great staple. Cook a large quantity on Sunday, use it in a rice bowl one day and then throw it in a salad the next. Or, add it to a burrito as filler. Chop what you can in advance. It's so convenient to just pull your chopped veggies from your fridge on a weeknight. If you know you have a busy week coming up, you can purchase pre-chopped vegetables. It's a little more expensive, but at least it ensures some vegetables in your meals. When things get hectic, try a meal delivery service. All you have to do is open packages, assemble, and cook. Easy as 1, 2, 3. And you'll have the recipe for future meals. The following soup recipe is perfect for this time of year, when local vegetables are fresh and plentiful: Carrott Ginger Soup Total Time: 55 minutes 3 tbsp olive oil 1/2 yellow onion, diced 1/4 cup fresh ginger, minced 4 cups chopped and peeled carrots (about 1 1/2 pounds) 3 cups vegetable broth 1 1/2 cups orange juice Dash nutmeg Salt/pepper to taste In a large pot, sautée onions and ginger in olive oil until soft for about 3-5 minutes. Add carrots and vegetable broth and reduce heat to medium. Allow to simmer for about 40 minutes, or until carrots are soft. Add orange juice and stir well. Carefully working in small batches using a food processor or blender, process the soup until smooth.
