Canning without sugar will be successful, providing the ingredients are cooked twice as long as they would be with the usual amount of sugar in them. If jam or marmalade made, which requires more sugar than can- ned fruits, less than the usual "half and half" amount should be used, and the ingredients cooked longer. is Extreme care should be taken in sealing properly all fruits and vegetables. We have for limited distribution | the bulletins mentioned below. | Write to United States Food Ad- | ministration, Room 746, '111 West | Washington street, Chicago, Illinois. Order by number. How to neutralize acid fruit juices with-carbonate of lime, sterilize and | bottle without sugar.-- Bulletin 859. How to sterilize fruit juices with- out sugar.--Bulletins 839 and 853. How make a tart fruit butter without sugar.--Bulletins 853 and 900. It is important during the present season to consider what vegetables to select for canning and the most economical procedure to use. The following suggestions should have general value: Do not can vegetables that can be dried. Do not can vegetables which can be matured to form a more nutritious food. Lima beans and others are examples of this class. Root crops like beets and carrots should be stored instead of canned. Some products like tomatoes can be concentrated in purees and pastes and thus take up less space. Pea-pods can be boiled down and canned as a puree for soups. All canned vegetables when opened should be boiled for two minutes no matter how they are to be used. Drying furnishes a good substitute for canning and when properly done gives attractive and wholesome pro- ducts. Much space in storing and expense of containers are saved. Sugar is scarce--Jars are high, so dry, dry, dry! | to Food Resolutions That the problem of Food control is a colossal one fraught with great difficulties. That the Food Administration works along three lines--Production, Distribution and Consumption. Under the latter comes Conservation. The first can be encouraged and stimulat- ed; the second controlled by law; the third--by education alone. That the program must be a flexible one as conditions change with sea- sons and in different parts of the country. We feel that this point is particularly important because it is an answer to much of the criticism regarding changes in recommenda- should be done to change this im- pression. That the carrying out of this pro- gram is in the hands of people who are "7icer than we and that we must think of ourselves as soldiers under superior officers--must do as they direct and not question as to the wis- dom of the proceeding. A soldier does not question--he obeys. That even though we have a huge [crop this season and large supplies | of other foods; the surplus must go into storage to avert famine later on. A simple explanation of the law | of supply and demand based on the | follow a: clarbitrary' rorulatian | prices has a tendency to réduce pro- | duction--if consumption is increased { production is stimulated "which in { creases the supply, thereby auto- (matically reducing prices. However reasonable we may be, we are inclined to resent the necessity of waiting until someone else finishes a leisurely conversation. Aug. 5 Not infrequently a telephone reported busy is in use by a child at home or some minor employe in an office who is taking advantage of the parents' or employers' absence to "visit' over the wire.
