Try to make a good dressing. The heart of any salad is the dressing. Here are a few salad hints: Treat your salad bowl as you do your omelette pan. t should preferably be made of plain wood unvarnished and untreated. t shouid neyer be washed! When through using it' wipe out well with a dry cloth or paper towel. Use only a fine grade of wine vinegar and go sparingly. Wash saiad greens well under cold water. Do not cut the leaves up but break them carefully into bite size pieces with your fingers. Wrap in a dry cloth and place in the fridge for an hour to become firm and crisp.
