Courtice South Girls Win Darlington Soccer Championship Newcastle's deputy fire chief, Jim Aldridge demonstrates a fire extinguisher to some of the nursing staff at Strathaven Nursing Home last Wednesday, October 20. The deputy chief spoke to the staff during health and safety week at the nursing home. GOODBYE. 4II Club's Bread Making The first session of the Elizabethville 4H home- maker's club was held at Mrs. Margaret Long's home. We divided into two groups Elizabethville I with Mrs. Long and Mrs. Smith as leaders, Elizabethville II with Mrs. Foster and Mrs. Mercer. Elizabethville II held their election of officers President Michelle Leggette, vice president president Bonnie Macauley, Secretary Jackie Handley, Treasurer Kelly Freeland, Press Reporter Lisa Gibbs. Other members are Barb Toms, Cathy Todd, Connie Sheppard and Louise Pontefract. Our unit is called bread winners and we named our club Bun warmers. At the first meeting we discussed the basic ingredients, equipment, and method involved in making bread. We learned how to knead bread by making pizza dough, which turned out very well. The second meeting we learned the essential techniques in mixing bread dough by the straight dough method and how to shape a pan loaf as well as rolling and baking them. The objectives of our third meeting were (a) to find economical forms of yeast available in our area (b) learn how and when cornmeal potato and other flour substitutions substitutions can be made (c) study the structure of the wheat kernel (d) to make free standing breads (e) to find out ' how and when the refrigerator and freezeer can be used as a convenience in bread making. Each person brought a sample of bread made at home, therefore we were able to study and test each others home-made bread. Courtice South girls' soccer team has captured the championship for Darlington junior schools. The girls' team played four games, ending in a tie between Courtice South and Hampton. A play-off failed to break the tie and in sudden-death overtime, Marlene Rohrer of South Courtice scored the winning goal, giving her team the 1982-83 championship.
