12 The Canadian Statesman, Bowmanville, April 6, 1983 Section 3 Kitchen Keperi Green Pepper Fillets 1 kg pike or pickerel fillets, fresh or thawed Salt, pepper Paprika 25 ml oil 25 ml butter 25 ml lemon juice 2 green peppers, cut in thin strips 1 onion, thinly sliced Cut fillets into serving size portions. Measure fillets at thickest part. Season with salt, pepper pepper and paprika. Heat oil and butter in a frying an. Panfry fillets on th sides, allowing a total cooking time of 5-7 min. per cm. Remove to serving dish. Sprinkle with lemon juice and keep warm. In the same pan, saute green pepper pepper and onion until tender. Arrange vegetables vegetables over fish. Makes 6 servings. Herbed Trout With Sour Cream 4 trout, fresh or thawed Salt, pepper 25 ml butter 15 ml chopped onion 50 ml dry white wine or lemon juice 15 ml chopped parsley parsley 0.5 ml chervil 0.5 ml tarragon 60 ml sour cream 50 ml soft buttered bread crumbs Wipe trout inside and out with a damp cloth. Sprinkle cavities lightly with salt and pepper. Grease 4 oblong pieces of heavy aluminum foil. Place a trout on each. Melt butter and saute onion 2 min. Add wine, parsley, chervil and tarragon. Divide mixture mixture evenly over each trout. Wrap tightly and place packages on a cookie sheet. Bake at 230°C, 15 min. or until fish flakes easily. Open packages just enough to expose fish, being careful careful not to lose liquid. Spread 15 ml sour cream over each trout and sprinkle with bread crumbs. Broil until lightly browned. Serve in foil. Makes 4 servings. 1 % 1 Golden Cake 2% cups Cake & Pastry Flour - 675 mL - i 1 tbsp. baking powder -15 mL tsp. salt - 5 mL cup shortening -150 mL 1% cups sugar-350mL 3 eggs 1 tsp. vanilla-5 mL iy 3 cups milk - 325 mL Frosting x k cup butter, softened -125 mL 4 cups sifted icing sugar -1000 mL Vi cup light cream - 50 mL 2 tsp. lemon juice - 10 mL 1 (10 oz.) can mandarin mandarin oranges, drained - 284 mL (10 oz.) can crushed pineapple, ■ drained - 284 mL Sift flour, baking powder powder and salt together. Cream shortening, sugar, eggs and vanilla, vanilla, beating until light and fluffy. Add flour mixture alternately with milk, making 3 dry and 2 liquid additions, combining lightly after each. Spread natter into 2 greased and floured 8" (22 cm/1.5 L) round layer cake pans. Bake at 350 degrees F (180 degrees degrees C) for 35-40 minutes minutes or until toothpick inserted in centre comes out clean. Cool in pan 10 minutes, then turn out on wire rack to cool. Prepare frosting: cream butter. Gradually Gradually add icing sugar, cream and lemon juice, beating until light and creamy. Put cake layers layers together with some frosting between. Frost top and sides of cake. Decorate top with ring of mandarins. Fill centre with well-drained crushed pineapple.
