4 The Canadian Statesman, Bowmanville, July 25,1984 Kitchen Kepere ' Delicious Ontario Ratatouille This vegetable combo is good hot or cold. On a cool evening, serve hot, topped with melted cheese. When it's hot outside, serve chilled. 1 medium eggplant, peeled and diced Vz tsp salt 2 cloves garlic, finely chopped 3 medium yellow cooking cooking onions, chopped (1-V 2 cups) 4 tbsp vegetable oil 2 medium zucchini (6 to 8 in. long), sliced 15 mushrooms, sliced (l-'/acups) 1 green pepper, chopped 5 medium tomatoes, cored, peeled, seeded and chopped 1 tsp salt Vz tsp dried thyme leaves Vz tsp dried marjoram leaves Vi tsp pepper 2 tbsp chopped parsley 2 * slices mozzarella cheese or Vz cup Parmesan cheese Early in the day: Sprinkle eggplant with Vz tsp salt. Set aside. Saute garlic and onions in 2 tbsp oil, in large ovenproof skillet or casserole, for 5 minutes. Add zucchini and continue to saute for 5 minutes more. Remove vegetables from pan. Add 1 tbsp of oil to pan. Saute mushrooms and green pepper 8 to 10 minutes. Remove from pan. Drain eggplant. Saute in remaining 1 tbsp oil 5 minutes. Add tomatoes. Cook together 5 minutes. Put all vegetables back into pan. Sprinkle with salt, thyme, marjoram and pepper. Cover and simmer 25 minutes, stirring occasionally. Remove lid, add parsley and cook 5 minutes longer. Cool. To serve hot, cover vegetables with 2 slice mozzarella cheese. Reheat in oven at 160°C (325°F) for 30 minutes. To serve cold, serve cooled ratalouille sprinkled with Parmesan cheese. Makes 6 one-cup servings. servings. Macaroni Supper Salad For a cool patio supper, complete in one bowl, try this layered salad. Be sure to prepare it the night before. Dressing % cup mayonnaise Vz cup sour cream 1 tsp prepared mustard 3 tbsp milk Vi tsp salt Vi tsp paprika dash white pepper Salad 2 cups frozen peas, thawed Vz cup sliced celery 1 cup raw macaroni, cooked and drained 1 cup thinly sliced radishes Vz cup sliced green pepper 4 carrots, thinly sliced (2 cups) 4 green onions, sliced O/2 cup) 1 cup grated old Cheddar cheese 3 slices cooked ham, cut into strips 3 hard cooked eggs, sliced To make dresssing, blend all ingredients thoroughly. To make salad, layer all ingredients in a large glass bowl. Start with peas, celery and one half of the macaroni. Top with Vz cup of salad dressing. Then layer radishes, green pepper, carrots, green onions, remaining macaroni, Va cup salad dressing, grated cheese, ham and egg slices. Top with remaining salad dressing, spreading dressing to edge of bowl to completely cover top layer. Cover and refrigerate overnight. Makes 4 to 6 servings. Crunchy Spinach Toss A different spinach salad. Try this late in the summer, with the first of the early apples. 3 cups spinach leaves, bite-size pieces 3 cups Iceberg lettuce leaves, bite-size pieces % cup sliced radishes 1 cup thinly sliced cucumber Va cup vegetable oil 2 tbsp. cider vinegar Vz tsp. dried mint leaves 2 green onions, chopped chopped ( Vi cup) 2 apples, cored and sliced 2 tbsp. salted, shelled sunflower seeds Combine spinach, lettuce, radishes and cucumber in salad bowl. Mix oil, vinegar, mint and green onion in small bowl. One-half hour before serving, core and slice apples, add to dressing and stir gently to coat apples. Let stand one-half hour. To serve, pour apples and dressing over ingredients in salad bowl. Toss well. Sprinkle with sunflower seeds. Makes 4 to 6 servings.
