The entire contents contents of a can of salmon, including the liquid, skin and tender bones, arc edible edible and contribute flavor and nutrients to the dish being prepared. Smoky Salmon Spread has the gourmet gourmet taste of expensive smoked salmon, salmon, yet can be made with one of the less expensive varieties of canned salmon like chum or pink. The secret is a dash of liquid smoke which is added added to a creamy blend of cream cheese, flaked canned salmon, lemon juice, grated onion and horseradish. The mixture is chilled, then shaped into into a ball or festive fish shape and garnished garnished with chopped pecans and parsley. 1 can (15'4-oz.) salmon or 2 cans (7 3 A-oz. each) salmon, drained and flaked 1 tablespoon lemon juice 2 teaspoons each grated onion and prepared horseradish ■A teaspoon liquid smoke Vi teaspoon salt 3 drops bottled hot pepper sauce 1 package (8 oz.) cream cheese, softened Vi cup chopped pecans 2 tablespoons minced parsley Assorted crackers Combine salmon, lemon juice, onion, horseradish, liquid smoke, salt and pepper sauce with cream cheese; blend well. Chill several hours. Combine Combine pecans and parsley. Shape salmon mixture into a fish shape or ball. Cover entire surface with nut mixture. Chill. Serve as a spread with crackers. Makes about Vh cups. Served piping hot with a parsley- lemon sauce, Party Salmon Balls will be the hit of any get-together. Flaked canned salmon is combined with bread crumbs, beaten egg, onion and garlic, then shaped into balls. Before serving, the little nuggets arc sauteed in butter Party Salmon Balls can (lS'A-oz.) salmon or 2 cans (7 3 4-oz. each) salmon cup bread crumbs cup finely chopped onion egg, beaten clove garlic, minced teaspoon salt Dash pepper tablespoons butter or margarine tablespoons lemon juice tablespoons minced parsley Drain and flake salmon, reserving liquid. Combine salmon, reserved salmon liquid, bread crumbs, onion, egg, garlic, salt and pepper. Shape into into balls, about 1-inch in diameter. Chill. Brown salmon balls on all sides in butter. Transfer to chafing dish or warm serving dish. Add lemon juice and parsley to skillet. Pour over salmon balls. Makes approximately 3 dozen. Guests who are watching their calorics calorics will welcome these assorted salmon-vegetable snacks. Celery sticks, cucumber slices and cherry tomatoes are topped with a tasty blend of flaked canned salmon, cottage Salmon-Vegetable Snacks 1 can (7)4-oz.) salmon, drained drained and flaked Vi cup cottage cheese Vi cup finely chopped celery 2 tablespoons minced green onion Vi teaspoon dill weed '4 teaspoon salt Cherry tomatoes, celery sticks and scored cucumber slices- Combine salmon, cottage cheese, chopped celery, green onion, dill weed and salt. Cut a thin slice off the top of each tomato. Scoop out inside. Spoon salmon mixture into cherry tomatoes and celery sticks and onto cucumber slices.
