Cover with plastic wrap and let stand overnight, overnight, stirring partway through. In food processor or with medium size of grater, grate carrots to make 3 cups (750 mL). Drain any rum not absorbed absorbed by fruit and set aside. In bowl, combine carrots, carrots, nuts and marinated fruit; mix well and set aside. In large bowl, stir together together sugar, all-purpose and whole wheat flours, baking powder, baking soda, salt, cinnamon, nutmeg and allspice; allspice; make a well in the centre. In bowl, whisk - together oil, eggs, vanilla and re v served rum from fruit; pour dry ingredients into well; stir just until moistened. •Stir in carrot mixture until well distributed. Pour into greased 13 x 9 inch baking dish and smooth top. Bake in 350F oven for 45 to 50 minutes or until top springs back when lightly toucned in centre. Remove pan to rack.
