A little dab of this condiment does wonders for roast beef, burgers, even a grilled cheese sandwich. For quick peeling of onions, remove remove ends, then cover onions onions with boiling water and let stand for two minutes. Drain and slip off skins. 2 lb (1 kg.) Ontario Yellow Yellow Cooking Onions (about 10 medium), peeled. 1 sweet red pepper. 1/3 cup butter (75 mL) 1/2 tsp salt (2 mL) 1 cup dry sherry (250 mL) 1 cup diy red wine (250 mL) 1/3 cup granulated sugar (75 mL) 1/2 tsp hot pepper sauce (2 mL) In food processor, thinly slice onions to make eight cups (2 L). Seed red pepper and slice into julienne strips about one inch (2.5 cm) long. In wide saucepan, melt butter over medium heat. Stir in onions, red pepper and salt until evenly coated. Cover and reduce heat to low; cook, stirring often, for 30 minutes or until onions are very soft. Add sheriy, wine, sugar, and hot pepper sauce; increase increase heat to medium and boil gently, uncovered and stirring frequently, for about 30 minutes or until most of the liquid is reduced.
