Section Two The Canadian Statesman, Bowmanville, Wednesday, December 8,1993 9 STMASTIM AND THE GIVING IS EASY!^ Christmas Kitchen Capers Cheese Cake for the Holidays Fruit Jumbles 1 1/2 c. raisins 1/4 c. apple juice 2/3 c. flour 3/4 tsp. baking soda 3/4 tsp. cinnamon 1/4 tsp. each nutmeg and cloves ground 1/4 c. brown sugar packed 2 tbsp. soft butter 1 egg 2 c. whole nuts (walnuts, pecans) 1 (4 oz.) pkg. candied cherries cut in halves Soak raisins in apple juice for 1 hour. Drain. Measure flour (without sifting) onto square of waxed paper. Add spices, soda, stir well. Cream brown sugar, butter and egg until fluffy. Add dry ingredients mixing well. Stir in drained raisins, nut and cherries. Drop by teaspoonful onto greased baking sheets. Bake at 325°F for 12 minutes, remove remove from baking sheets and place on wire racks to cool. Store in airtight airtight containers. Makes 4 dozen. Joan Eaton Thimble Cookies 1 cup soft butter 1/2 cup brown sugar 2 egg yolks 1 tsp. vanilla 2 cups pastry flour 1/2 tsp. salt Mix above, well. Form into small uniform balls. Drop into egg white, then, roll into finely chopped walnuts. Place on greased cookie sheet and make a depression in the middle with a thimble or the end of a floured wooden spoon. Place in 375°F oven for 5 minutes. Remove from oven and make a deeper depression. Using a coffee spoon fill depression with raspberty or apricot jam, then cook 8-10 minutes longer. Delicious and freezes well. A must - no distractions while baking. Mar yMillson Cheese Cake Crust 1 c. graham cracker crumbs 3 tbsp. sugar 3 tbsp. melted butter Mix and pat in bottom of pan - spring form. Filling 1 1/4 lbs. cream cheese 2 oz. butter 1/2 lb. sugar 3 eggs Flavourings: to 3 oz. pumpkin 1 - Cream butter and cream cheese for 5 mins. Add sugar, beat 2-3 mins. Add eggs one at a time - scrape bowl, add flavoring Bake 350°F for 40-45 mins. When centre is slightly firm turn oven off and open door slightly. Cook for 45 mins, in oven. Cool on counter for 2 hours. Refrigerate. Brian Ward - Chef at the King Street Bar and Grill. Butter-Pecan Shortbread 1 c. softened butter (no substitution) 1/2 c. firmly packed brown sugar 2 c. all-purpose flour 1/2 c. finely chopped fresh pecans Preheat oven to 300°F. Grease a 9" square pan. In a mixing bowl - cream butter well. Gradually beat in sugar, and beat until light and fluffy. Gradually beat in flour. Stir in pecans. Press evenly into 9" square pan. Prick softly with a fork. Bake in preheated preheated oven 30-35-40 minutes. Cool slightly, then with a sharp knife cut into small squares. Mary Millson Freezer Orange Jewels 1 (7 1/2 oz) pkg vanilla wafers (now comes in Christies 250 gram package) 3/4 c. desiccated coconut 3/4 c. icing sugar 1/2 c. frozen orange juice concentrate thawed (undiluted) Crush wafers finely and combine with remaining ingredients. Shape into small balls. Roll in extra icing sugar. Freeze on large cookie sheet. When firm, repack, in freezer containers containers and return to freezer. Defrost to serve.
