Tasty Recipes From Around The Kitchen AFTER-DINNER COFFEE . Place a heaped teaspoon of brown sugar in a warmed glass with two tablespoons of liquor. Some of the more popular choices are: brandy, whisky, rum, vodka, creme de cacao, or almond- or coffee-flavored liqueurs. Pour on a strong, medium roast coffee. Stir well to dissolve the sugar. Rest the spoon against the rim of the glass and pour lightly whipped cream over the back and into the glass. If sufficient sugar has been used, the cream will float in a thick layer on the top. The following recipe, a favorite coffee drink in the South, is still served in New Orleans' French- Quarter restaurants. CAFE BRULOT To prepare, place 1 tablespoon brown sugar, 5 whole cloves, a long strip each of lemon peel and orange peel, 'A cinnamon stick, 'A vanilla bean and :'A cup (150 ml) brandy in * saucepan. Heat gently until the sugar dissolves and the brandy is warm. Ignite with a long match and allow to bum for about 30 seconds. Pour into 4 cups that are three-quarters full of hot, strong coffee.
