Reverend Sedgwick spoke on "Don't You Care Lord" from Mark 4: 38. After the benediction lunch and coffee was served. On Thursday the seniors had their games, not as big a crowd as usual. I was unable to attend so I have no report. Mrs. Weslheuser returned to her home after a few days in the Bowmanville hospital. Alyson brought her home. Lesley is home for now but may take another course in Biology. They are expecting their uncle and aunt from B.C. for a few days to visit his mother and family. Mae Muldrew attended a shower for her granddaughter Denise Avery, held at her daughter Shirley's home on Sunday. Beryl DeKoker was with me last Monday for a visit. She leaves for a holiday July 4 in Australia near Perth. Recipe Berry-Best Chicken Salad We find Ontario Strawberries one of the easiest easiest fruits to use, from soup through salad to dessert. No matter how or where they appear, they taste wonderful. Preparation Time: 10 min. Chill: 1 hour Serves 6 Dressing: 1/3 cup (75. mL) light mayonnaise 1/4 cup (50 mL) apple butter butter 1/4 cup (50 mL) low-fat plain yogurt 1 to 2 tsp (5 to 10 mL) curry powder Salad: 2 cups (500 mL) cubed cooked chicken 1 cup (250 mL) sliced celery celery 3 cups (750 mL) halved Ontario Strawberries 1 cup (250 mL) diced. Ontario Greenhouse Cucumber 2 green onions, sliced 3 cups (750 mL) torn, fresh spinach 1/4 cup (50 mL) toasted slivered almonds Freshly ground black pepper pepper Dressing: In small bowl, combine mayonnaise, apple butter, yogurt and curry powder powder to taste. Stir well. Salad: In large bowl, stir together chicken, celery and dressing. Cover and refrigerate refrigerate for 1 hour or until chilled. To serve, stir in strawberries, cucumber and onions. On large platter, arrange spinach leaves. Top with salad; sprinkle sprinkle with almonds, and pepper to taste.
