With growing conditions conditions described as ideal, it looks as if Ontario's 1997 apple crop could rival the record crop of 1995, with an expected harvest of 15.219.000 bushels. (The 1995 crop delivered 15.500.000 bushels of apples to market). But numbers aren't the only thing impressive about this year's harvest. "We're anticipating an excellent crop of high quality apples, with the texture and taste that make Ontario apples a cook's first choice," says Herb Williamson, market development manager of the Ontario Apple Marketing Commission. It's more than just Mac; in addition to the favorite McIntosh, consumers can expect to see Empire, Red Delicious, Idared, Golden Delicious and Crispin apples, as well as Spartan, Cortland and Northern Spy varieties. And while ripening apples signal that autumn's on its way, it's still not too late to fire up the grill and enjoy outdoor cooking with the best of Ontario's harvest: harvest: Ontario apples, broccoli broccoli and cauliflower. For grillers on the go, Grilled Chicken and Apple Pouches offer quick prep and great taste. If beef's more to your preference, Vermicelli with Broccoli and Grilled Beef offers a soy sauce and chili sauce flavor punch that brings out the best in Ontario broccoli. For the perfect side-dish, reach for Potato and Cauliflower Salad, with its distinctive horseradish and blue cheese dressing. And for dessert? Why, apples of course: Simple Apple Dessert Squares, a dish that proves that quick and tasty really do go together. Looking for even more quick ideas? Don't pul away that grill!
